Meal Planning Monday - a half a week holiday edition!

Meal Planning MondayA lot of this week will look horribly familiar. Some of last week's again got carried over, thanks to some last minute changes of plan. This is good because I want to minimise what I buy this week as we are going to Devon on Friday and I want to use what is in my fridge. Actually, I did the weekly shop on Sunday and I bought no fresh meat for the week and a lot of things to eat and drink during the journey down. As we're leaving on Friday, there's only 4 meals to plan.

This is our (half) week.

Monday - Chicken and sweet potato curry
Tuesday - Lentil and aubergine bake
Wednesday - Chipotle bean chilli with baked eggs
Thursday - Calzones with various fillings (for which read whatever we have left in the fridge!)

There will be no Meal Planning Monday from me next week as holidays demand more flexible meal plans (and it will be nothing special!).

Meal Planning Monday - the salad edition!

Meal Planning MondayI'm not ACTUALLY going to say it's too hot but yes, it's a bit warm, isn't it? I have no inclination to turn on ovens and I'm having a bit of a reaction to a busy weekend of Missy Woo's birthday followed by the Wimbledon final, which felt interminable to me, so heavens only knows how it felt to the players!

As a result, I'm going to attempt to make most of the weather and just do as many salads and grilled food as possible. Some are our favourites, some are new ones.

Here goes. I am literally planning this as I type this post so it really is hot off the press.

Monday - Bean, ham and egg salad
Tuesday - Sausages in buns or wraps with corn relish
Wednesday - Spicy salmon tabbouleh
Thursday - Sandwiches
Friday - Loaded mushroom burgers
Saturday - Omelette wedges
Sunday - keeping free for cake club!

Meal Planning Monday - the not very well June edition!

Well, I'm getting there but on Friday, I came down with a sore throat and later in the day, whatever is causing the sore throat completely wiped me out, so much so that I crawled into bed at 7.15pm and slept most of the evening, with the children looking after me and putting themselves to bed. I'm feeling lots better now after sleeping on and off all night on Friday and part of Saturday morning but the sore throat doesn't seem to want to go away so I'm sucking extra strength throat lozenges to avoid having to take paracetamol all day long.

Not the best end to our half term week although the children aren't officially back until Tuesday. Then they have Well being week at school and so are very excited about going in wearing sports kit instead of uniform this week. More exciting is the fact that Monkey should get his cast off on Wednesday so we can return to normal again, which is a relief. And it's your archetypal busy week - I have two evening meetings this week, Missy Woo has a party to go to, and it's Sports Day on Friday. I think we have something every day until the weekend (and then husband is working the weekend). Hey ho...

Nearly all these recipes are from this month's BBC Good Food magazine so I can't provide links as they take a while to get on the website. I drew up a shortlist and Monkey chose them - and asked for scrambled egg for tea as it's just him and me for tea due to the other half of the household actually having social lives (how very dare they?). It's all pretty simple stuff, nothing complicated and the Sunday stew will go in the slow cooker and be finished in the oven.

So, this is our week in food.

Meal Planning Monday - the freezer springclean edition!

It might well feel like it's still Winter - we had snow on 22nd March with massive drifts on some of the roads, what is going on? - my freezer is desperately in need of a spring clean. I've got things in there I could really do with using so this week, before I put together my plan, I did a quick audit of things that need turning into meals in my two freezers and added in a couple of things from my cupboards (which could also do with sorting out but not quite so urgently). This keeps the food bill down, and reduces wastage.

Nothing is particularly complicated - they're often things I've made before with a couple of new things thrown in for good measure (or at Monkey's request, he wants to try Tandoori Chicken!) One of the recipes comes from another blog that links up to Meal Planning Monday - when I have time, I like to look around and note down ideas for future weeks so I'm never faced with a blank sheet of paper when starting my plans. Saves me even more time and I get to discover new blogs all the time!

Here's the week - the children here don't finish until Thursday by the way so it's fairly "normal" until Thursday and then they are off Friday. Husband is working the weekend so it's just the kids and me so it won't feel that much different than any other weekends and won't feel much like Easter.

Monday - Spicy bean fajitas
Tuesday - Thai Fish Pie
Wednesday - Slow cooker pork goulash
Thursday - Home made burgers and baked chips
Friday - Tandoori chicken
Saturday - Freezer surprise (there's a pie in there that needs some extra potato topping but I can't remember what it is!)

Meal Planning Monday - the trying to eat more veg edition!

It seems like the only time I come here at the moment is to do my meal plans. I know, I know but really, I've been busy. Monkey had a birthday on Saturday and preparing for it whilst juggling work seemed to take it out of me - I was in bed early (for me) on Thursday and Friday and then on Saturday, I got in bed shortly after 11pm - unheard of for me - and slept like a log until nearly 9.

I have to admit, I've been feeling a bit sluggish lately and even Monkey got sent home from school on Friday with a tummyache. This turned into nothing, thank God, but it made me reflect on the fact that we don't seem to have had much in the way of veg these last few weeks. So, this week, there are more in the plan. And no, I still haven't got around to doing that pea soup. It WILL happen this week. It WILL. Looking at the plan, it seems to be a lot of beans and pulses actually but onions and tomatoes are featuring too.

The children seem to have signed themselves up for every after school activity going lately. One or both of them have something on 3 days of the week, we go to the gym on Wednesdays, leaving only Fridays for down time. Not ideal, but some of the activities are only for a few weeks and it is entirely their choice so I don't feel so bad. Monday is going to be good because they are both at school until 4.30! Then, at the weekend, both the children are coming to Clandestine Cake Club with me then Monkey is going to stay at the grandparents for his birthday treat (a trip to see Horrible Histories!).

This is what I have planned.

Monday - Roast beef hash (adapted slightly)
Tuesday - Chicken with spices and cream (aka Nigel Slater's chicken curry)
Wednesday - Chipotle bean chilli with baked eggs
Thursday - Minty pea and potato soup (don't laugh)
Friday - Mushroom risotto
Saturday  - keeping free, I will have cakeache
Sunday - Sticky roasted sausages with lentils

Meal Planning Monday - the fairly late but feeling almost summery edition!

Meal Planning Monday Yes, yes, yes. I'm late with this. I actually worked out WHAT meals we were going to eat this week but didn't work the when. This was because we were away and when I arrived home, I had to make sure I'd done my online food shop.

So, having not picked up the food until this afternoon, I've just gone through what we're having and asked the kids when we were going to have each thing. This week seems to have a summery feel to it in places and the weather since the weekend seems to reflect that - it might not be the warmest but it's dry and sunny.


Monday - pizza (which we've just had!)
Tuesday - Homemade fish finger sarnie
Wednesday - Bean burgers with lime yogurt and salsa
Thursday - Summer vegetable curry
Friday  - Lemony prawn and pea risotto
Saturday - Baked chicken masala with almond pilaf
Sunday - Chilli beef shepherd's pie

Meal Planning Monday - the February trying to keep it healthy edition!

Meal Planning MondayYay, it's really February now. The nights are getting lighter. It's slightly warmer (although I've just noticed snow is forecast for later, joy). And I'm still trying to be healthy. If you picked up this month's Good Food (which is actually the March edition, go figure), you'd be forgiven for thinking that people only eat interesting healthy food in January, because a lot of the recipes are quite fattening, starting with the recipe that is 1,100 calories per adult portion. Stuff that - that's for Christmas!

So I've had to hunt around to pad out my plan for the week.

What's going on this week? Well, parents evening is on Wednesday and so sandwiches are the order of the day then. Apart from that, not masses is going on other than the usual routine. Husband is working his weekend off, but in advance of taking two weekends off for half term, which is the third week of February.

This is what I have planned for us foodwise this week.

Monday -  Southwestern black bean casserole
Tuesday - Slow cooker turkey stroganoff
Wednesday - Sandwiches
Thursday - Spiced parsnip and cauliflower soup
Friday - Pork taco mix probably done as fajitas
Saturday - Smoked salmon spaghetti
Sunday - Chorizo and pepper lasagne

Meal Planning Monday - the busy nearly Christmas week edition



Well, that's the only way I can think of to describe it. It's not quite Christmas but there are plenty of Christmas things going on. The children have their school show this week on Tuesday and Wednesday, we're going in to hear Monkey's class play their ukuleles (yes, really!) on Wednesday morning, the children are off to have a sleepover at Granny and Granddad's and going to a pantomime (oh no they're not!), leaving us to have some child free time, possibly to go to Manchester for the Christmas markets. Oh, and the husband has an appointment to be Father Christmas for a group of babies and small children.

It's nothing special - easy or quick things mostly. Still using some things from the freezer, trying to keep some things lighter in advance of the rich food that is to come in the weeks to come.

Here, then, is our week.

Monday - Bean chilli with baked sweet potatoes
Tuesday - Sausage and bean cobbler (from the freezer!)
Wednesday - Cauliflower cheese soup
Thursday - Honey and lemon chicken
Friday - Pizza? Or maybe fishfingers?
Saturday - not cooking
Sunday - Greek lamb and macaroni bake

Meal Planning Monday - the almost December edition!

Almost December. Well, it will be by the weekend. I'm still keeping the shopping down but I have done a shop already. I lasted 13 days between big shops by the way! I only had a Saturday night delivery because I had a discount code from Ocado and it was cheaper for delivery than Sunday.

I've picked out a couple of new things to make this week but I'm still trying to be vaguely frugal and not buying too much so that the freezer level keeps dropping. I'm using up some things in my freezer and fridge and I'm making lasagne again because, well, everyone really enjoyed it. Friday is being kept free because my good friend Lynne is finally getting married and we're all going to the party in the evening and I'm going for the day. On Thursday, we not only have dance lessons, we also have a meeting afterwards at school so that makes that afternoon and evening a little chaotic.

Meal Planning Monday - the My Family Club edition

This week, I am doing something different again. I was approached to talk about a brand and I said yes because I took a look and liked what I saw. My Family Club is a website that wants to help parents save money and time, and from today, is starting an ad campaign coming to a TV near you.

When I first looked at the site, I noticed that it had a kitchen section. There are meal plans and a wealth of recipes that are easy to make and on your pocket. So, as I've done this sort of thing before, I decided to plan a week of meals from the site to test them out. None of the meal plans were completely right for me, so I picked out my favourites from their recipe section and made my own plan.

Here, then, is our week in meals. Two things I noticed when doing my plan - one was that the recipe section wasn't easily searchable nor the recipes grouped logically so you had to click through all the recipes to find your favourites. The other was that the butternut squash, bacon and mushroom lasagne recipe says that it is a "vegetarian" alternative, which made me laugh. Surely not?

Wednesday - Bean burgers and paprika chips
Thursday - Sandwiches as usual
Friday - Shepherd's pie with a twist
Saturday - keeping free, although it's likely to be tapas.

If proof were needed that these are easy on the pocket, I bought all the ingredients in an online shop last night and I struggled to get my bill over £40, even with me stocking up the house after the school holidays, and trust me, I have run out of  most staples.  Admittedly, I do seem to be very well stocked in my store cupboard at the moment and have some chicken in the freezer. I bought some extra treats to take it over the minimum order value.

Meal Planning Monday - the Monkey birthday edition



As the title suggests, it's Monkey's birthday this week. Friday to be precise, when he turns seven and obviously, this week's meal plan reflects the change to usual routine that this will provide. We're having a party at home, which I have not done in years for him and so, Saturday is a bit of a write off. He's asked to go out to Pizza Hut for tea on the Friday so we're going to be very pizza-ed out! That leaves us only 4 meals to plan this week as Thursday is always a riot of after-school activity so we just tend to have sandwiches for simplicity and speed.

Here, in meals, is our week. The recipes I'm using are from the latest edition of Good Food, which landed on my doorstep just as I was doing an online shop. None of the recipes are currently on their site, so I can't link to them but they will be there in a week or two.

Monday - Cod (well, white fish) with bacon, lettuce and peas
Tuesday - Smoky bean, bacon and eggy bread bake
Wednesday - Singapore noodles
Thursday - Sandwiches
Friday - Pizza Hut
Saturday - party so leaving free - probably leftover pizza but we'll see.
Sunday - Potato frittata with pesto and goats cheese

A chilli that will change your life!

No, honestly. Stick with it. Trust me....

I discovered this recipe courtesy of Penny, a lovely lady who writes Penelope's Pantry. It's actually from the Waitrose site. I first made it around Christmas, when it was of course freezing. It sounds an odd combination but my husband is enamoured with the chorizo sausage so I thought it was worth a try. I wasn't prepared for how lovely it turned out. It's just a bit of chopping and plonking everything in a pan, then leaving to cook. That means that even me, one of the messiest cooks going, can get cleaned up before it's ready and there's only one pot dirtied at the end of it. Other reasons I love it include:

  1. It goes with a wide range of accompaniments - bread, baked potatoes, rice, tortilla chips - so it is good for using up what's left in the house. That's what I've done today - I made a last minute decision to make it. You can grate cheese over the top, or add a dollop of soured cream, or even natural yogurt if you want to reduce the fat content.
  2. It is perfect comfort food. Today, I needed cheering up so making it and eating it has certainly lifted my spirits. 
  3. It freezes and reheats well. I often make enough for 4 adults and there's tons left over. Even tonight, when I've effectively made half, there's still some left over but I am fairly sure I won't get to see the leftovers. 
  4. It is also forgiving of slight changes, more of which later. 
If you are dubious about making a "chilli" that doesn't include mince or at least some form of beef, don't be. It's less effort and is done in an hour or so. Waitrose say 1hr15 to 1h30 but I normally have it done in just over the hour. This recipe in your repertoire will also make your life easier because even half a butternut squash will keep in the fridge for several weeks and so does chorizo. So, it's great as a standby to whack on and leave to cook if you want to cook but don't want to be standing there for ages.

If you've never used butternut squash before, take three tips from me for preparing it:

  1. Don't bother peeling it if you are roasting it. 
  2. Peel using a y-shaped peeler along the length of the squash
  3. Slice the squash in half just where it bulges (sorry!) and scoop the seeds out with a spoon before chopping up, much easier.

Chorizo, Bean, Pepper and Butternut Squash Chilli

2 tbsp olive oil
1 onion, finely chopped
2 cloves garlic, finely chopped
225g Spanish chorizo (from the deli counter), peeled and diced
1 large red chilli, chopped
2 x 400g cans chopped tomatoes
1 tbsp dark brown muscovado sugar
1 red pepper, deseeded and chopped
1 butternut squash or pumpkin, about 500g peeled weight, deseeded and cut into 3-4cm diced
410g can cannellini beans, drained and rinsed
20g pack fresh flat-leaf parsley, roughly chopped
  1. Heat the oil in a large saucepan and cook the onion and garlic for 5 minutes, or until softened. Add the chorizo and red chilli, and cook for a further minute until the chorizo releases its red juices.
  2. Add the tomatoes, sugar, pepper and 150ml cold water. Cover and simmer gently for 10 minutes.
  3. Stir in the squash, cover and simmer for a further 45 minutes, stirring occasionally, until the squash is tender. Finally, add the cannellini beans, simmer for 5 minutes and stir in the parsley. Serve immediately.

Now, today, as it was a last minute decision to make this and it's Sunday, so there is not a lot in the house. I made a lot of changes.

Firstly, I had NO onions at all. Shock, horror. We survived, that's all I'll say. I also had very little garlic in. The lack of neither ruined the final flavour of the dish.

Next, I rarely bother peeling chorizo as it's such a faff. Never had any complaints so far. They wouldn't dare.

I don't use red chilli. I get complaints if it is too hot. Instead, I use Spanish pimenton pepper which I've got in one of those little square tins. Mine is picante so I have to temper how much I use if I don't want complaints. But it adds to the smoky flavour that the chorizo gives the dish.

I use whatever sugar I have in. As my baking sometimes seems to dictate about 45 different varieties of sugar, it's what is in my cupboard or nowt else. Today, I used soft light brown sugar.

I had no red pepper, nor any flat leaf parsley. I don't like packs of herbs unless I can't avoid them for a start. A touch of parsley at the end does add some freshness to it but you won't really miss it if you don't have it.

Finally, and this is something I have learned through making this a few times, I add the beans much earlier than 5 minutes before the end. I feel the beans need more time to soak up the juices and flavours such as the pimenton. When I have added only 5 minutes before the end, I've felt the beans have felt kinda raw and jarring against everything else that has nicely cooked together. It works for me, that's all I'll say.

The flavour is quite smoky, offset by the sweetness of the butternut squash. I would never use pumpkin for this dish as I feel it's too watery. You don't even need to buy good quality chopped tomatoes for this so a budget brand will do if you're watching the pennies. It's probably worth buying a good chorizo but then, I am a food snob that way - it doesn't have to be a really expensive one, just decent quality so that it doesn't render lots of fat with a nice flavour to impart to the rest of the dish.

Go on, try this. It really will change your life. It won't make you thin, rich or help you fulfill all your ambitions, you'll just be glad you discovered it, and you'll cook it regularly, so much so that I bet chorizo and butternut squashes become a feature of your fridge.
