Meal Planning Monday - a half a week holiday edition!

Meal Planning MondayA lot of this week will look horribly familiar. Some of last week's again got carried over, thanks to some last minute changes of plan. This is good because I want to minimise what I buy this week as we are going to Devon on Friday and I want to use what is in my fridge. Actually, I did the weekly shop on Sunday and I bought no fresh meat for the week and a lot of things to eat and drink during the journey down. As we're leaving on Friday, there's only 4 meals to plan.

This is our (half) week.

Monday - Chicken and sweet potato curry
Tuesday - Lentil and aubergine bake
Wednesday - Chipotle bean chilli with baked eggs
Thursday - Calzones with various fillings (for which read whatever we have left in the fridge!)

There will be no Meal Planning Monday from me next week as holidays demand more flexible meal plans (and it will be nothing special!).

Meal Planning Monday - the Wimbledon quick meals edition!

Meal Planning MondayYes, it's that time again and at the time of writing this on Sunday evening, I'm like a child on Christmas Eve. For tomorrow (today when you're reading this) is the first day of Wimbledon. I'm a huge tennis fan and I love it in all its forms but for me, Wimbledon is THE one as it's something I have grown up watching and I love the wall to wall coverage of it. Hence not a lot is going to get done for the duration and my meal plan has to reflect an ability to do mostly throw together meals or at least be able to be made ahead. You will note that two dishes from last week have reappeared as they got bumped after some last minute changes last week. I WILL get to make them this week.

Apart from tennis, I have to go to London for the day on Thursday which is going to be long as I have to get the 6am train from Preston. It's sandwich day anyway so at least they'll manage that between the three of them (the children now enjoy making their own butties when I let them). Oh, and Monkey has chosen Monday's tea as he has a friend coming for tea, a boy who has recently joined his class from another school. Again, I made sure it didn't involve too much faffing or can be made ahead of time and will help me maximise tennis viewing opportunities.

This is the plan, in all its glory.

Monday - Lasagne
Tuesday - Sweet and sticky wings (with supermarket coleslaw, so shoot me)
Wednesday- Baked aubergines with cannellini beans
Thursday - Sandwiches
Friday - Pea & spring onion tart (will make this on Weds)
Saturday - Sweet chilli bangers in buns and coleslaw
Sunday - Sweet potato and spinach bake

Meal Planning Monday - the quiet mid-Summer week edition!

Meal Planning MondaySo, I'm writing this after a weekend where my feet barely touched the ground. We went to a family wedding on Saturday, which was fabulous, and on Sunday, they held a day after party at their house. No time for anything and in the build up, I baked a cake which I decorated on Sunday lunchtime before taking over to Blackpool.

Back to normal this week. Nothing particularly unusual is happening, and I am very glad of that. We do, however, still have children doing five different after school activities between them, three of which are on the same day! They are finishing football this week though so as of next week, we'll  be down to four. Hurrah. My meal plan in response to this comprise a few easy peasy meals, and I've picked a couple of things to use up things in my freezer.

This is what we're having.

Monday- Sausages, sweet potato mash and onion relish (with broccoli not courgette)
Tuesday - Sloppy Joe bake
Wednesday - Warm smoked mackerel and new potato salad
Thursday - Sandwiches
Friday - Baked aubergines with cannellini beans
Saturday - Pea and spring onion tart
Sunday - Roast beef with salads

Meal Planning Monday - the Wembley edition?!

If only it were me that were going to Wembley but the male half of the household is going on Saturday to see Blackpool play in the play-off final against West Ham, leaving the female half at home. Actually, I'm going to a conference on Saturday morning and Missy Woo is going to a friend's house to play, and in the afternoon, we may watch the match on telly and go out for tea. The rest of the week is still quite busy in that kind of post-sale way - catching up with things that went by the wayside last week. We're actually having something that is not sandwiches this Thursday, because Monkey has no football so I can bring them both home after school - so happy about that! 

So, here we go with this week's plan - links where available. Some recipes are from this month's BBC Good Food magazine and therefore not yet on their website but they might be in a few weeks. 

Monday - Sweet chilli dogs
Tuesday - Aubergine, tomato and lemongrass curry (original and full recipe from Nigel Slater's Kitchen Diaries)
Wednesday - Sticky marmalade chicken with mash and broccoli
Thursday - Herbed lamb cutlets with roasted veg
Friday - Healthy salad nicoise
Saturday - keeping free
Sunday - Roast chicken (this will either be a celebration or comfort food for the Wembley wanderers).

Meal Planning Monday - the May bank holiday edition!

Yes, even on a bank holiday week, I get planning (although I won't be for the next one). I could have subtitled this the busy week edition as it seems that way. Even though today is a bank holiday, my husband is working a bank shift so it's just me and the kids (joy!). Then, on Wednesday, he's working a late shift so he can go into school in the morning, then I'm out in the evening. And at the weekend, I'm helping at our NCT branch's nearly new sale all day so I don't cook. I think I might be exhausted by Sunday! 


Here's my week with links where possible; Tuesday and Wednesday are from the latest edition of BBC Good Food and often don't make it onto their website for a few weeks afterwards, so try looking in a few weeks if you don't want to buy the magazine. 

Monday - Chicken, sweet potato and coconut curry
Tuesday - Chorizo pilaf
Wednesday - Halloumi aubergine burgers
Thursday - Sandwiches
Friday - Quiche sans pate with salad - I have an English recipe (or at least I think I have!).
Saturday - Chinese take away (it's traditional!)
Sunday - Prawn pasta bake

Meal Planning Monday



Lordy, these weeks come around so fast. Last week's plan went largely to it - so well, in fact, I had to scrabble around for something to make today which I managed (chicken and sweetcorn pie if you're wondering).

Onto this week's plan. Here it is.

Monday - Chicken biryani bake (from the freezer)
Tuesday - Sweet and sour lentil dhal with grilled aubergine
Wednesday - Italian meat loaf
Thursday - Courgette and orzo bake
Friday - Mini-burgers and homemade potato wedges
Saturday - Tapas tea (we'll be supporting Barcelona in the Champions League final.
Sunday - Chicken curry

Some new things to try and some easy things - having to make the meatloaf in advance because I am probably away on Wednesday night so I need to make something that can just be placed in the oven.  I am most looking forward to tapas on Saturday. There's no fish this week but I'm trying to empty the freezer to defrost it and have no fish left in it!
