Meal Planning Monday - the minimal spend December edition!

Meal Planning MondayThe title says it all. Time to use up as much stuff as I have already - especially as my cupboards are full to overflowing. My freezer, not so much but I have enough to make a meal plan! One is a carry over from last week as I went to the Good Food Show thanks to Barber's Cheese and it was a last minute decision to go as husband wasn't feeling well.

So I've put together a plan based on what I have to use up, so here we go.

Monday - Slow cooker butter chicken
Tuesday - Butternut squash and roasted garlic risotto
Wednesday - Cowboy corned beef 'n' beans pie
Thursday - Sandwiches
Friday - Chicken wings
Saturday - Beany nachos
Sunday - Lasagne

I think my shopping list tomorrow will consist of bread! I may need a few things here and there but I pretty much have everything in already.

Meal Planning Monday - a winter holiday edition!

Meal Planning Monday Yes, I'm on leave this week as I have a lot of leave to use before the end of the year. Of course, I am supposed to be having a quiet week but no. We're going out on Monday night (that's just the grown ups). Tuesday morning, I'm on a course. Wednesday afternoon, I'm spending in school. And Thursday, I'm planning a Christmas shop to Ikea and Costco. Am I bonkers?

(Don't answer that.)

Anyway......

I think we're having a fairly standard week if you ignore the fact that the grown ups are going out for dinner on Monday night. Monkey has been nagging at me for weeks to make sushi so I have promised we will do this on Tuesday as the children come home later and I will have time to prepare everything. Oh yes, Monkey is having a friend come home for tea on Friday which is currently the only day we can do that in the week. Really.

Monday - Fishfingers, beans and chips for the children
Tuesday - Sushi a la Monkey
Wednesday - Boerenkool Stamppot
Thursday - Butties
Friday - Chickeny stuff for the children, Cheesy broccoli orzo for the grown ups
Saturday - Sweet and sticky wings
Sunday - Roast pork etc

Meal Planning Monday - the Wimbledon quick meals edition!

Meal Planning MondayYes, it's that time again and at the time of writing this on Sunday evening, I'm like a child on Christmas Eve. For tomorrow (today when you're reading this) is the first day of Wimbledon. I'm a huge tennis fan and I love it in all its forms but for me, Wimbledon is THE one as it's something I have grown up watching and I love the wall to wall coverage of it. Hence not a lot is going to get done for the duration and my meal plan has to reflect an ability to do mostly throw together meals or at least be able to be made ahead. You will note that two dishes from last week have reappeared as they got bumped after some last minute changes last week. I WILL get to make them this week.

Apart from tennis, I have to go to London for the day on Thursday which is going to be long as I have to get the 6am train from Preston. It's sandwich day anyway so at least they'll manage that between the three of them (the children now enjoy making their own butties when I let them). Oh, and Monkey has chosen Monday's tea as he has a friend coming for tea, a boy who has recently joined his class from another school. Again, I made sure it didn't involve too much faffing or can be made ahead of time and will help me maximise tennis viewing opportunities.

This is the plan, in all its glory.

Monday - Lasagne
Tuesday - Sweet and sticky wings (with supermarket coleslaw, so shoot me)
Wednesday- Baked aubergines with cannellini beans
Thursday - Sandwiches
Friday - Pea & spring onion tart (will make this on Weds)
Saturday - Sweet chilli bangers in buns and coleslaw
Sunday - Sweet potato and spinach bake

Meal Planning Monday - the post-marathon edition



So, we are post-marathon. Husband ran the Greater Manchester Marathon yesterday in shocking conditions in 4:37, seven minutes faster than he ran his first one last year. He reckons he could have shaved off 15 to 20 minutes off that time if the wind hadn't been so bad, which would have been great. In fact, he went through a half marathon in 2:07 which displays how well he was doing until he hit the really hard bit. We're all so proud of him, Missy Woo drew him a picture with the words "Winner" along the top and she's desperate to take his medal into school.

Onto this week. It's a mixed week - I have cake club tomorrow night so I will mostly not be eating for a day before or after and husband has a meeting and possible social event on Thursday. Plus, it's our wedding anniversary on Saturday so will probably be going out on Saturday as a family as we are a bit short on babysitters at the moment. We have, therefore, a few old faves to make to use up freezer stocks and a couple of new things to try.

Onto our plan.

Monday - Turkey and cranberry meatloaf (from My Daddy Cooks)
Tuesday - Pizza
Wednesday - Lamb coconut and mango pilau
Thursday - Sandwiches (possibly pizza if Missy Woo's friend comes for tea)
Friday - Sticky chicken wings - without the noodles!
Saturday - keeping free
Sunday - Roast vegetable and goats cheese penne (also from My Daddy Cooks)
