Meal Planning Monday - the family choice edition!

Meal Planning MondayAnother week, another dollar. Or something. Not wanting to hunt out lots of meals for my plans this week, I opened it up to the children and husband who made a few suggestions and I dropped in a couple of extra things. I've even been to the supermarket on Sunday to buy it all so the week will start with me vaguely organised.

Here we go for this week. 

Monday - Fried eggs with chorizo, onions and potatoes
Tuesday - Lasagne
Wednesday - Ribs and coleslaw
Thursday - Sandwiches
Friday - Cauliflower cheese
Saturday - Italian spiced chickpea burgers
Sunday - Roast beef

Nothing particularly fancy there; my kids are fairly traditional in taste. Missy Woo loves cauliflower cheese, Monkey wanted roast dinner and they both adore pasta! Husband wanted chicken or ribs and the kids chose ribs. Who am I to argue?!

Meal Planning Monday - a half a week holiday edition!

Meal Planning MondayA lot of this week will look horribly familiar. Some of last week's again got carried over, thanks to some last minute changes of plan. This is good because I want to minimise what I buy this week as we are going to Devon on Friday and I want to use what is in my fridge. Actually, I did the weekly shop on Sunday and I bought no fresh meat for the week and a lot of things to eat and drink during the journey down. As we're leaving on Friday, there's only 4 meals to plan.

This is our (half) week.

Monday - Chicken and sweet potato curry
Tuesday - Lentil and aubergine bake
Wednesday - Chipotle bean chilli with baked eggs
Thursday - Calzones with various fillings (for which read whatever we have left in the fridge!)

There will be no Meal Planning Monday from me next week as holidays demand more flexible meal plans (and it will be nothing special!).

Meal Planning Monday - the trying to eat more veg edition!

It seems like the only time I come here at the moment is to do my meal plans. I know, I know but really, I've been busy. Monkey had a birthday on Saturday and preparing for it whilst juggling work seemed to take it out of me - I was in bed early (for me) on Thursday and Friday and then on Saturday, I got in bed shortly after 11pm - unheard of for me - and slept like a log until nearly 9.

I have to admit, I've been feeling a bit sluggish lately and even Monkey got sent home from school on Friday with a tummyache. This turned into nothing, thank God, but it made me reflect on the fact that we don't seem to have had much in the way of veg these last few weeks. So, this week, there are more in the plan. And no, I still haven't got around to doing that pea soup. It WILL happen this week. It WILL. Looking at the plan, it seems to be a lot of beans and pulses actually but onions and tomatoes are featuring too.

The children seem to have signed themselves up for every after school activity going lately. One or both of them have something on 3 days of the week, we go to the gym on Wednesdays, leaving only Fridays for down time. Not ideal, but some of the activities are only for a few weeks and it is entirely their choice so I don't feel so bad. Monday is going to be good because they are both at school until 4.30! Then, at the weekend, both the children are coming to Clandestine Cake Club with me then Monkey is going to stay at the grandparents for his birthday treat (a trip to see Horrible Histories!).

This is what I have planned.

Monday - Roast beef hash (adapted slightly)
Tuesday - Chicken with spices and cream (aka Nigel Slater's chicken curry)
Wednesday - Chipotle bean chilli with baked eggs
Thursday - Minty pea and potato soup (don't laugh)
Friday - Mushroom risotto
Saturday  - keeping free, I will have cakeache
Sunday - Sticky roasted sausages with lentils

Meal Planning Monday - the back to normal January edition!



Today - or sometime this week at least - marks the return of the normal routine for most people, with children returning to school and the lucky ones with long Christmas holidays going back to work. In our case, the children go back to school today, and my birthday always marks the end of Christmas and New Year celebrations. And much as I love my children, I need to get back into a routine and do some proper work! My husband has been working slightly different shifts over the holidays and so, although he's been working, he goes back to his normal evening shifts tonight too. We do have our friend staying for a day or two more, and the only other thing that is different is that I am going to London for a meeting on Saturday and am going to be out for 12 hours. Luckily, when I made crispy cheddar pie on Saturday, the quantities were vast so I made a separate one and froze it so that can be done without anyone doing any cooking.

I've got a booklet from BBC Good Food this month (actually, the February edition, it works very strangely!)  on healthy meals which is where most of the meals come from. I actually sat down last week and put this plan together and I've already planned next week too, as there was so much to choose from. It certainly makes shopping easier when you know what you're having. We're trying to get back into the healthy eating thing again now all the excesses of Christmas feasting is done.

Eyes down, look in, here is our meal plan for the week.

Monday - Veggie packed shepherd's pie (recipe pretty much identical)
Tuesday - Pork goulash and rice
Wednesday - Mexican chicken stew with flatbreads
Thursday - Indian chickpea and vegetable soup
Friday - Easy eggs with ratatouille
Saturday - Crispy cheddar pie from the freezer
Sunday - Lamb meatball and pea pilaf with cucumber yogurt

Meal Planning Monday - the MAD edition!


Yes, it's MAD. I'm off to the MAD Blog Awards on Friday so yet another week of me planning to pack, travel and unpack afterwards, but I can't wait. This week has to be pretty easy meals wise and I've planned in a meal I can make in advance for my night away and can simply be plonked in the oven. It certainly reduces the likelihood of them ending up in the chippy.

Still, I've managed to find some nice things to make this week!


Monday - Paxos Fish Stew (More of which later in the week)
Tuesday - Mexican Chilli
Wednesday - Easy Ratatouille with poached eggs
Thursday - Prawn Laksa
Friday - Tomato Chorizo and Two Cheese Pasta Bake 
Saturday - keeping free
Sunday - Roast Chicken, possibly.

Quiche sans pâte



If you know a smattering of French, you're probably thinking I've taken leave of my senses. "Quiche without paté? Has she gone mad? What quiche has pâté in it?" Well, you're right - none of them do. What's crucial is that their is no é making this pastry, not pâté (pronounced quiche sanz pat, literally). So, we're talking pastryless quiche.

If it sounds a strange concept, it's not. It's brilliant. If you're not good at pastry, (like me), it's a revelation. It's quick to prepare, can be made in advance and eaten at just about any temperature from straight out of the oven hot to chilled for hours cold. And it's made out of store cupboard ingredients and perhaps whatever you have in to fill it. With no baking blind, what is not to like?

I first came across quiche sans pâte when a mum (from southern France, of course) made one for a shared buffet - I was going to say Jacob's Join till I remembered it's a Lancashire term. I asked her for the recipe as it was so fab and made my own a few times. Then I managed to lose the recipe. As Googling doesn't produce a recipe in English, I have taken a recipe in French and adapted it for English tastes. It can be made with various fillings - the original recipe used ham but anything that you would normally use to fill a quiche will be great.

There's hardly any prep, unless you choose any fillings that need pre-cooking but don't forget to leave them to cool a little before adding them to the dish. Feel free to use any hard cheese for the filling. Gruyere is not to everyone's taste (although it is best cooked) and a mature cheddar does just fine. You can add herbs if you fancy it.

Oh, one final thing - it's best cooked in a metal/non stick dish. Make sure you grease anything you use really well as eggs will weld to the surfaces. If you use a dish with a smaller diameter (under 25cm), make sure you use a deeper dish to cook it. Small deep quiches may take longer to cook.

Quiche sans pâte
Serves 4-6, with leftovers

Ingredients

3 large eggs
200ml milk
100ml creme fraiche
2 heaped tbsp flour
100g gruyere or other hard cheese, grated
salt and pepper

Optional fillings
4 slices of ham, chopped
100g bacon lardons, fried until crisp
125g mushrooms, sliced and fried
1 red onion, chopped
4 asparagus spears

1. Heat oven to 200C/400F/Gas 4 and grease your dish well (I always use butter but you can use oil if you like).

2. Mix all the ingredients (except the cheese) for the quiche together in a bowl with a fork. Add all but a handful of the cheese to the mixture and stir together. Season well. All you need to ensure is that any lumps of flour are broken up.

3. Pour into the greased dish and add your chosen fillings to the dish. Scatter over the reserved handful of cheese.

4. Cook for an hour (although I check it about 35 mins in and if the top is already browned, I turn the oven down). It's done when there is no liquid egg left on the surface and it's all puffed up, although it will collapse again quickly. If you are eating hot, just leave it a few minutes before cutting.

This is great with chips or boiled new potatoes, and for veg, a green salad or steamed green beans.

Meal Planning Monday - the half term version



Yes, it's half term but you already knew that, didn't you? The children are off school and off on adventures. We've already had one or two and we have a few more lined up for them. One of them is the children are going to Blackpool tonight to stay with their grandparents so they can go see the illuminations. We're off to London on Friday too. I'm trying to ensure we eat well but some of the time, cooking might not be top priority. I've been asked to provide carbs as my husband is in his final stages of preparing for a 3 day run along the Ridgeway in November and is doing some long runs. It's also high time I started breaking out the slow cooker a lot more so a couple of slow cooker dishes make it in this week.

Here's this week's meals anyway.

Monday - Salmon pesto pasta
Tuesday - Lightly spiced slow cooker beef with mash
Wednesday - Mexican Ranch style eggs
Thursday - Slow cooker lamb curry with naan
Friday - Leaving free
Saturday - Bacon and pepper frittata
Sunday - Roast chicken

Meal Planning Monday

I'm back! Returned from our holiday this evening and the unpacking is done. Time to plan a week of meals for getting back into the routine. My BBC Good Food arrived and I managed to get a read of it whilst I was away on holiday and there were lots of things I wanted to try so there are a few recipes from there that I'd like to try.

Monday - Baked eggs with spinach tomato and chorizo
Tuesday - Wild mushroom and chestnut cottage pie
Wednesday - Honey mustard pork, mash and broccoli
Thursday - Pea pesto and prawn spaghetti
Friday - Sausage and bean casserole
Saturday - Onion pie
Sunday - keeping free

Seems like a reasonable mix. Two complete veggie dishes in a week and some seafood back on the menu. Sorry there are no links - either Good Food haven't added them to their database yet or they are likely to be copyrighted and not placed there, which is a shame.
