Nickie checked in with me on Saturday to see if I was OK as I hadn't blogged since January. Oops. Life just got in the way really - I'm working extra hours, the children have things most days and I keep forgetting on Sunday to blog a meal plan. Monkey turned 10 (heck!), I hurt my back (it's better now) and I went on a school trip to the Manchester Arena to take part in a Young Voices concert with Missy Woo.
So, my plan is done for the week and as I don't have work this week, I'm making myself write a blog. I generally plan on a Sunday so I can shop on a Monday but since discovering Asda's midweek delivery pass is £2 a month, I've been shopping online and getting a Tuesday delivery. That doesn't stop me planning on a weekend - it's actually better to do it on the weekend so I can get the slot I want.
As I'm off this week, as is the husband and the children, you will notice that there are a lot of easy meals. I make no apologies. I need a break too! I could make pizzas for The Voice final next weekend, but hell, I can't be bothered.
So, this is what my plan looks like this week.
Monday - Thai pork and peanut curry (made with leftover roast pork from yesterday)
Tuesday - Chorizo and butternut squash chilli
Wednesday - Chicken kievs
Thursday - Burgers and fries
Friday - Salmon and butterbean mash
Saturday - Pizza!
Sunday - Steak pie, mash and veg
Obviously, there are two weeks of school holidays over Easter. However, next week, the children are going away with their grandparents staying in a caravan for 4 days so I am planning that we might eat out a few times, so if I don't blog a plan next week, that'll be why. It may also be to do with the fact that April is year end deadline month for me at work and I get very, VERY busy!

Meal Planning Monday - the last week of Spring term edition!
Yes, really. If you're not up on how this year is panning out schoolwise, a lot of areas finish this week and go back straight after Easter, due to it being so late this year. In fact, I can only think of one time when it was later as husband's 40th fell on Easter Sunday and his birthday is 24th April.Added to that, I've got year end to contend with for the next month or so. So I'm busy at work and the end of term brings lots of things going on whilst gearing up for the holiday.
I'm late posting this but my plan came first and was all done and dusted in time for Mother's Day yesterday. This week, we're at a school event on Thursday night and I'm going to Manchester for The Cake and Bake Show on Saturday.
Without further ado, it's over to the plan.

Meal Planning Monday - the February at last edition!
You know I thought January went on forever. I won't go on about it anymore except to say "February, yay!" I don't know why I am saying that because this week appears to be stupidly busy. Tonight, the children are taking part in a Young Voices concert in Manchester so are going on a coach there at lunchtime with the rest of the school choir, rehearsing then staying for the concert. We're going of course, then going home and picking them up. It will be a late night for them and then Missy goes on a school trip to Salford on Tuesday. And to top it all off, Monkey starts back at cricket nets on Tuesday evening. Eventually, life returns to normal somewhere around Wednesday (ish) and I think hoping for a fast arrival of the weekend. I don't usually wish the week away but tired children usually equals grumpy children in our house.This is what we are having this week.
Monday - bacon butties for the grown ups, kids are taking a packed tea with them
Tuesday - Cauliflower cheese and jackets
Wednesday - Chilli and cornbread (held over from last week)
Thursday - Roasted butternut squash and carrot soup
Friday - Bhaji frittata

Sunday - Roast dinner (not sure which yet, we went shopping in Waitrose and I can't afford 90% of their joints)

Meal Planning Monday - the boring mid-January edition!
January. Doesn't it go on forever? I mean, I know I have a birthday in January, but after that, there are still 25 days to go until February. It feels like 125. Don't ask me why but it does. I'm not on an alcohol ban, food ban or other strange regime (apart from doing more classes because there are lots of new ones I want to try) but I'll be frank, it's dragging. How can there be 2 more full working weeks in the month?Moan over. I've tried to find some new things to brighten our January. I'm doing well so far this month because the chilli with cornbread topping I made last week was fabulous and will become a regular in the house. Here's hoping for this week's set of meals.

Meal Planning Monday - the play that one again edition!
Bit of a strange title, I know, but this last week, my meal plan went out of the window several times so I have lots of carry over dishes. This week might look a lot like last week's in places. Yes, it's finally here. A week off. A busy one for us, if the weather lets us do all the things we've got planned. The children and I are off to London on Wednesday, the day before we're all going to the ballet and we have another day out over the weekend.So, a short week of cooking, and I already have a carry over from last week. Not a lot to buy at the supermarket. Hurray.

Meal Planning Monday - the I don't know which season it is edition!
I've only called it that because I can't think of anything else to put! It's still September, I'm still getting myself back on an even keel and learning new routines. Getting there slowly should be the phrase of the week. I seem to have two dishes I didn't make last week - one of which was because I spent so long doing the supermarket shop that I it was too late to cook anything and be ready at a reasonable time for the children.There is nothing special on this week apart from all the things we normally do. The kids are doing choir at school, Missy Woo is dancing and both are swimming at separate times. We have no major social events to go to, although Monkey is keen to go to the presentation night for his cricket academy (even though he's yet to play for the team). Oh yeah, it's the proper launch of Strictly on Friday and Missy Woo will be giddy with excitement.
Apart from that, let's get on with the week. Some things are a bit retro and low effort, I like it like that.

Meal Planning Monday - the getting myself back in gear edition!
A meal plan, on a Monday. How unique! Seriously, this school holiday is messing with me cooking at the moment. The day is flying by before I realise I really ought to be cooking, then it's late and something else happens. I have so many things moved around, it's not funny. So... this week I am going to try to behave. Yes, there are carry overs from last week but still - I am at least going to make them!Eyes down, people. Brace yourselves...

Meal Planning Wednesday?
I'm getting terrible! The weekend was very busy and sadly, husband had to withdraw from the Ironman a short distance into the cycle as he caught a cold that went to his chest. It kind of threw us out as we were planning to catch up with him at various points and instead we had to go on a mercy mission to collect him from a high school I had never been to and had no clue where it was, and then we had to take him to his car later so he could collect it, then his bike and his other stuff. It was sad, but it was the right decision as he knew he couldn't finish the bike (he knows the hills to come). He turned up to collect his bike shortly after the time cut off for starting the run and a number of people came in just a couple of minutes late and were quite distressed they couldn't continue. He was glad it wasn't him as by then, they would have been going for ten and a half hours.Still, it was a shame after all that work. And after a weekend of trying to cook something with all the blackcurrants we have, I'm trying to keep on top of work. I have kind of had this plan in place anyway, especially as Monday's meal was a carry over from last week and today's was kind of put on hold.
This is the week I have planned.
Wednesday - Veg curry - effectively a fridge bottom one.
Thursday - Fish stirfry
Friday - Turkey tortilla stack
Saturday - Salmon nuggets & s pot chips
Sunday - Pork and veg folded pizza

Meal Planning Monday - the salad edition!
I'm not ACTUALLY going to say it's too hot but yes, it's a bit warm, isn't it? I have no inclination to turn on ovens and I'm having a bit of a reaction to a busy weekend of Missy Woo's birthday followed by the Wimbledon final, which felt interminable to me, so heavens only knows how it felt to the players!As a result, I'm going to attempt to make most of the weather and just do as many salads and grilled food as possible. Some are our favourites, some are new ones.
Here goes. I am literally planning this as I type this post so it really is hot off the press.

Meal Planning Monday - the not very well June edition!

Well, I'm getting there but on Friday, I came down with a sore throat and later in the day, whatever is causing the sore throat completely wiped me out, so much so that I crawled into bed at 7.15pm and slept most of the evening, with the children looking after me and putting themselves to bed. I'm feeling lots better now after sleeping on and off all night on Friday and part of Saturday morning but the sore throat doesn't seem to want to go away so I'm sucking extra strength throat lozenges to avoid having to take paracetamol all day long.
Not the best end to our half term week although the children aren't officially back until Tuesday. Then they have Well being week at school and so are very excited about going in wearing sports kit instead of uniform this week. More exciting is the fact that Monkey should get his cast off on Wednesday so we can return to normal again, which is a relief. And it's your archetypal busy week - I have two evening meetings this week, Missy Woo has a party to go to, and it's Sports Day on Friday. I think we have something every day until the weekend (and then husband is working the weekend). Hey ho...
Nearly all these recipes are from this month's BBC Good Food magazine so I can't provide links as they take a while to get on the website. I drew up a shortlist and Monkey chose them - and asked for scrambled egg for tea as it's just him and me for tea due to the other half of the household actually having social lives (how very dare they?). It's all pretty simple stuff, nothing complicated and the Sunday stew will go in the slow cooker and be finished in the oven.

Meal Planning Monday - the busy pre-bank holiday edition!
Yes, I know - we seem to be busy all the time at the moment but this week, we've had some added complications, which I'm sure you'd know about if you followed me on Twitter. On Monday evening, Monkey broke his arm. Well, we think it's broken - the hospital aren't actually sure but he's got his arm in a cast until at least this Wednesday when he returns to fracture clinic for his temporary cast to be removed, be x-rayed again - without swelling this time - and then they will decide if there is a break and if so, he'll have a proper cast put on which will probably be easier than the one he's got on at present. Needless to say, I could have done without a 3 hour trip to A&E on Monday, and having been there with Missy, I know that fracture clinic can eat up a day very quickly. On top of that, I'm spending most of the day at school today as I'm one of the governors on an interview panel to appoint a new teacher, plus I'm still working extra hours. And it's nearly half term, how did that happen?The only positive I can find so far about Monkey having his arm in a cast is that he can't go swimming, meaning Thursday afternoons are a little less fraught right now.
I gave everyone an opportunity to choose food and only Monkey came up with something definite - his favourite dish, something we haven't had for ages so that was allowed. Later, husband chipped in with a choice of a risotto. You'll note the chicken stew is on there - I completely forgot to take the chicken out of the freezer on Thursday night and then spent a good chunk of Friday morning in school (see above) so we ended up with steak pudding with chips all round! I WILL get it made this week, I truly will. Missy vaguely said she wanted some pasta and that stew will go with it.
After much waffling from me, here is the meal plan for this week.
Monday - Salmon with butterbean mash (as it can be done in 10 mins flat)
Tuesday - Honey mustard pork with mash
Wednesday - Prawn and pea risotto
Thursday - Sandwiches
Friday - Chicken, pancetta and mushroom stew
Saturday - Corned beef and beans pie
Sunday - Slow cooker lamb and sweet potato curry
That is the plan anyway, assuming that children stop breaking limbs, of course.

Meal Planning Monday - the post-Olympics edition
It's all over (the Olympics, that is) and we are bereft with only the prospect of the Paralympics in a couple of weeks to keep us going. That does mean that we are returning to a kind of normal in the household but it is still school holidays. I'm trying to keep it relatively simple whilst providing some kind of variety as I get bored so easily with what I'm cooking (if you hadn't noticed).

Meal Planning Monday - holiday/Olympic/August edition
I wasn't really sure what to call this, as you can tell. Normal routine has gone out of the window, what with scrapbooking, watching the Olympics and not a lot else really. Mostly watching the Olympics! The week reflects my need not to make anything too complicated. Sunday, we are having tapas to celebrate (and commiserate the closing ceremony of the Olympics, that I really don't want to end).

Meal Planning Monday - the Gousto edition!
Yeah, so I've been ill, as I might have whinged on here in past days. It actually went on a lot longer than I thought, and the doctor put me on antibiotics which seems to have been the catalyst for getting properly better. Because of this, I'm behind with pretty much everything. Thankfully, last week, the lovely people at Gousto asked if I'd like to try out some of their meals. The idea is you have a subscription, and pick out how many meals you'd like to feed your family per week then just choose the meals you want each week. All the ingredients are then delivered to your home with a recipe card for you to make your chosen meals.
Usually, that's on a Wednesday but because we're not quite in their delivery area yet, ours are arriving on Thursday, so we will be trying those at the end of this week. That just left me with the start of this week to sort out - some meals have been carried over again from last week and I've only just got around to deciding what else we're having but we are there.
Here, then, is our week in meals.
Monday - Special fried rice with barbeque chicken (yes, we have finally eaten this, third time lucky)
Tuesday - Minted lamb koftas, pitta, salad, tzatziki
Wednesday - Easy peasy lentil curry

Thai fish pie - family style
This sounds mad, doesn't it? I first saw it on one of the last episodes of Something for the Weekend and thought I had to give it a go. Unfortunately, on looking at the recipe, I realised I would have to adapt it if I were to make it for all of us as it had fresh chillies in it. With this adaptation in mind, I set about buying the ingredients - and discovered that monkfish was not only difficult to find, it was damned expensive. There were various things about the recipe that I felt weren't quite right (you can tell it was written by a chef rather than a food writer) - like I'm still not sure if it was a typo that 200g butter would be added to the mash. So I've done my own version based on this.
I still add a bit of chilli powder to this, but if you want, you can leave it out. However, I like that it leaves a little bit of warmth at the back of your mouth, just enough for you to know it's there but not enough to have Monkey and Missy Woo grabbing drinks and complaining "It's too spicy." They love this, as do I. If you do want it really spicy, just add some fresh chopped chilli in step 2.
The important ingredients are the lemongrass and the kaffir lime leaves, as they really add flavour. Both are easily bought from supermarkets these days - make sure you buy fresh, not dried, lemongrass.
Thai Fish Pie
Serves 4-6
Ingredients
700g sweet potato, peeled and cut into chunks
200g potatoes, peeled and cut into chunks
1 tbsp vegetable
1 onion, finely chopped
1 clove garlic, crushed
1 stalk lemongrass, bruised (just bash it with the handle of a knife)
2 kaffir lime leaves
1 tsp mild chilli powder (optional)
400ml coconut milk
100ml milk
400g white fish, cut into chunks
200g salmon, skin removed and cut into chunks
200g peeled prawns, preferably king or jumbo size, either raw or cooked
25g butter, plus a knob of butter for the mash
25g flour
100g frozen peas
1 lime, juice and zest
fish sauce (optional)
1. First, place the sweet potato and potato into a pan of hot water, cover and bring to the boil. Simmer until soft. Drain.
2. Whilst the potatoes are cooking, heat the oil in a large pan and add the onion, garlic, lemongrass and kaffir lime leaves. Cook over a medium heat for about 3 minutes. Add the chilli powder, if using, stir and cook for a couple more minutes. Add both milks. If using light coconut milk, turn the heat right down immediately. If you have time, turn the heat off and leave to stand for a while to infuse.
3. Add the white fish and salmon to the pan. If you're worried about the coconut milk splitting, turn the heat off and allow the fish to poach using residual heat, otherwise keep the heat down as low as possible. After about 3/4 minutes, add the prawns if they are raw. They will turn pink when they are cooked.
4. Using a slotted spoon, lift the fish out of the pan and place in your dish, putting the poaching liquor to one side. Your dish needs to be about 25cm x 25cm although I tend to use a small lasagne dish. Scatter over the peas. Turn the oven onto 200 C /400F / Gas 6.
5. When the potatoes are done, mash them with a knob of butter. I also tend to add a squeeze of lime juice to cut the sweetness. Season. Take the lemongrass and kaffir lime leaves out of the poaching liquor before you make the sauce.
6. In another pan, melt the 25g butter, add the flour, and cook for a minute. Add the poaching liquor a bit at a time, whisking constantly. Once it's all added, squeeze in the rest of the juice of the lime and add the zest, bring it up to the boil then simmer gently for 5 minutes, stirring all the time. Season to taste - I tend to do this with a dash of fish sauce, but you can use salt and pepper if you like.
7. Pour the sauce over the fish and peas. Scoop the mash over the fish and rough up the surface in whatever way you choose; I tend to use the back of a spoon. Cook in the oven for 25 minutes. If you like a crispy top (don't we all?), place it under a hot grill for a few minutes.
You can serve with some stir fried greens if you like but it's fine just as it is, and leftovers also reheat well.

Meal Planning Monday - the reality bites edition
So, my birthday has been and gone, the kids are back at school and reality hits home. It's January and I want to eat as healthily as I can. The month feels like it goes on for ever too so let's hope this one passes quickly. The healthy eating well explain why there are three dishes containing poultry on the menu this week. Again, all the recipes (apart from the risotto, which is just made up) are from BBC Good Food this month but none of them have reached their website. And excuse the chicken pies - they are in my freezer and I've actually checked, they're not too bad in the calorie department.
Here is next week then. Nothing out of the way, I'm leaving Saturday free because I am not currently sure what we are doing.

Meal Planning Monday - the extremely late edition
Yes, I know it's late. I did actually plan our meals for this week before we went away but we got home last night and this morning was busy with washing, shopping and general catching up so no time to blog my plan.
This is last week of term, and the children have parties and odd days so it's kind of all over the place. I'm trying to ensure that the children get their 5 a day after the amount of chocolate, chips and pizza they ate over the weekend. And they're going on a sleepover to Granny's on Saturday so I need to keep their veg intake up in advance of that.
Here we go:
Monday - Sausages in Onion Gravy (which we've already had, and was as lovely as ever!)
Tuesday - Salmon, broccoli, and dill lasagne (already made, my own recipe)
Wednesday - Slow cooker chilli con carne (with extra crusty bread, cucumber and tomatoes)
Thursday - Sandwiches
Friday - Vegetable curry
Saturday - Takeaway or meal out
Sunday - leaving free

Meal Planning Monday - the not cooking much and we're going away edition
I think the title says it all today. We're going away this weekend (which you'll be able to read about after we get back), and so I won't be cooking Friday to Sunday. Also, because we'll be away and spending money, I want to keep the food bill down and nothing be too much trouble as we have a busy week with Christmas plays at school and that sort of stuff that goes with the last but one week of term before Christmas. I went on a bit of a rummage (it certainly wasn't a forage) and dug out from my cupboard and the depths of my freezer stuff I can turn into family meals with minimum effort.
Prepare to be underwhelmed by this week's meal plan.
Monday - Salmon and butterbean mash (an old favourite I can make in ten minutes)
Tuesday - Chicken fajitas (using the smokey BBQ fajita kit I got in my goody bag from Sainsbury's last week)
Wednesday - Jacket potatoes (which is fast becoming a top favourite with the children)
Thursday - Fridge bottom vegetable soup and sandwiches (to use up what's left in the fridge)
Friday - away
Saturday - away
Sunday - away
I bet you cannot wait now, can you? I can't - my shopping list this week is very short indeed!

Meal Planning Monday - the half term version
Yes, it's half term but you already knew that, didn't you? The children are off school and off on adventures. We've already had one or two and we have a few more lined up for them. One of them is the children are going to Blackpool tonight to stay with their grandparents so they can go see the illuminations. We're off to London on Friday too. I'm trying to ensure we eat well but some of the time, cooking might not be top priority. I've been asked to provide carbs as my husband is in his final stages of preparing for a 3 day run along the Ridgeway in November and is doing some long runs. It's also high time I started breaking out the slow cooker a lot more so a couple of slow cooker dishes make it in this week.
Here's this week's meals anyway.
Monday - Salmon pesto pasta
Tuesday - Lightly spiced slow cooker beef with mash
Wednesday - Mexican Ranch style eggs
Thursday - Slow cooker lamb curry with naan
Friday - Leaving free
Saturday - Bacon and pepper frittata
Sunday - Roast chicken
