Meal Planning Monday - the January back to work edition!

Meal Planning MondayThe day has arrived. I've been off work for 37 days which have actually passed in the blink of an eye but Christmas does that, doesn't it? Even last week flew by in a flurry of birthdays, a resumption of school activities and getting back into the exercise groove.

Thinking that this week will pass in a never ending battle against a mailbox full to the brim, I have planned early and even had a Sunday food delivery. Today is a leftovers recipe, and tomorrow's is a dish that is in the freezer. The rest is a mix of new things and old favourites - Missy Woo asked me to do the lamb pilau as both of them love it.

So, this is it.

Monday - Turkey and stuffing chelsea buns
Friday - Fish pie
Wednesday - Chilli with cornbread topping
Thursday - Chunky butternut squash mulligatawny
Friday - Cheese and lentil loaf
Saturday - Lamb, coconut and mango pilau
Sunday - Roast chicken

Meal Planning Monday - the New Year edition!

Meal Planning MondayThis plan took a very long time. I certainly struggled for inspiration as to what to cook this week. It's that time where nothing actually happens. We have no further trips to visit family, husband is back at work, except for New Years Day so it's kind of a normal holiday week with a special day in the middle.

Also, after all the cooking I did last week, this week seems a bit dull. Never mind, I got there in the end. Hope you had a great Christmas by the way.

Here is the week.

Monday - Cauliflower cheese
Tuesday - Takeaway
Wednesday - Swiss fondue (wish me luck on this one, the kids have never had it)
Thursday - Slow cooker corned beef hotpot
Friday - Friday night fish pie
Saturday - Mexican bean chilli
Sunday - Black pudding rumble

That's all for now. Time to get back to my little ones and enjoy the rest of this holiday. Happy New Year!

Meal Planning Monday - the October comfort food edition!

Meal Planning Monday(I couldn't think what else to call it!)

It's getting colder. Yeah, it's not that cold compared to some of last winter. But cold, compared to what it used to be recently. I don't like this. The heating is on, although don't tell husband but I've got it set so it's only just taking the edge off the cold in the house which means it's not coming on that much at the moment.

Anyway....

Need to use up leftover roast chicken this week and I have a dish carry over from last week after a change of plan when Missy Woo went out for tea on Saturday leading to a freezer dive. We're away at the weekend at a family party for my nephew's 30th birthday. Yes I do feel old, thanks very much.

So, this is it.

Monday - chicken and stuffing pasties
Tuesday - Sweet pea fish pie
Wednesday - Beef keema with carrots and potatoes
Thursday - Sandwiches (tho I'm going out in the evening)
Friday - Honey mustard pork
Saturday - away
Sunday - keeping free, possibly fish finger butties or just takeaway

Meal Planning Monday - the freezer springclean edition!

It might well feel like it's still Winter - we had snow on 22nd March with massive drifts on some of the roads, what is going on? - my freezer is desperately in need of a spring clean. I've got things in there I could really do with using so this week, before I put together my plan, I did a quick audit of things that need turning into meals in my two freezers and added in a couple of things from my cupboards (which could also do with sorting out but not quite so urgently). This keeps the food bill down, and reduces wastage.

Nothing is particularly complicated - they're often things I've made before with a couple of new things thrown in for good measure (or at Monkey's request, he wants to try Tandoori Chicken!) One of the recipes comes from another blog that links up to Meal Planning Monday - when I have time, I like to look around and note down ideas for future weeks so I'm never faced with a blank sheet of paper when starting my plans. Saves me even more time and I get to discover new blogs all the time!

Here's the week - the children here don't finish until Thursday by the way so it's fairly "normal" until Thursday and then they are off Friday. Husband is working the weekend so it's just the kids and me so it won't feel that much different than any other weekends and won't feel much like Easter.

Monday - Spicy bean fajitas
Tuesday - Thai Fish Pie
Wednesday - Slow cooker pork goulash
Thursday - Home made burgers and baked chips
Friday - Tandoori chicken
Saturday - Freezer surprise (there's a pie in there that needs some extra potato topping but I can't remember what it is!)
Sunday - Ham hock and cabbage hash

Meal Planning Monday - the autumn half term edition!



Yes, it's that time again. Half term in our house and not before time. It's been a long few weeks for the children and they need that time to let off steam and not worry about anything for a few days. Husband working evenings means he can spend some time with us during the day without having to take time off.

My meal plan is going to be as little fuss as possible, although I have one dish that I am finally going to make, having finally acquired ham hocks! It's going to be mostly using up freezer things.

Here we go then.

Monday - Sausage and bean cobbler (from the freezer)
Tuesday - Mushroom stroganoff
Wednesday - butties / keeping free
Thursday- Ham hock with pinto beans
Friday - Slow cooker chickpea and potato soup with pesto
Saturday - Thai spiced fish pie
Sunday - keeping free

And yes, all warming things - am sat here on a cold, wet day when it's got dark early for the first time feeling very cold.

Thai fish pie - family style


This sounds mad, doesn't it? I first saw it on one of the last episodes of Something for the Weekend and thought I had to give it a go. Unfortunately, on looking at the recipe, I realised I would have to adapt it if I were to make it for all of us as it had fresh chillies in it. With this adaptation in mind, I set about buying the ingredients - and discovered that monkfish was not only difficult to find, it was damned expensive. There were various things about the recipe that I felt weren't quite right (you can tell it was written by a chef rather than a food writer) - like I'm still not sure if it was a typo that 200g butter would be added to the mash. So I've done my own version based on this.

I still add a bit of chilli powder to this, but if you want, you can leave it out. However, I like that it leaves a little bit of warmth at the back of your mouth, just enough for you to know it's there but not enough to have Monkey and Missy Woo grabbing drinks and complaining "It's too spicy." They love this, as do I. If you do want it really spicy, just add some fresh chopped chilli in step 2.

The important ingredients are the lemongrass and the kaffir lime leaves, as they really add flavour. Both are easily bought from supermarkets these days - make sure you buy fresh, not dried, lemongrass.

Thai Fish Pie
Serves 4-6

Ingredients
700g sweet potato, peeled and cut into chunks
200g potatoes, peeled and cut into chunks
1 tbsp vegetable
1 onion, finely chopped
1 clove garlic, crushed
1 stalk lemongrass, bruised (just bash it with the handle of a knife)
2 kaffir lime leaves
1 tsp mild chilli powder (optional)
400ml coconut milk
100ml milk
400g white fish, cut into chunks
200g salmon, skin removed and cut into chunks
200g peeled prawns, preferably king or jumbo size, either raw or cooked
25g butter, plus a knob of butter for the mash
25g flour
100g frozen peas
1 lime, juice and zest
fish sauce (optional)


1. First, place the sweet potato and potato into a pan of hot water, cover and bring to the boil. Simmer until soft. Drain.

2. Whilst the potatoes are cooking, heat the oil in a large pan and add the onion, garlic, lemongrass and kaffir lime leaves. Cook over a medium heat for about 3 minutes. Add the chilli powder, if using, stir and cook for a couple more minutes. Add both milks. If using light coconut milk, turn the heat right down immediately. If you have time, turn the heat off and leave to stand for a while to infuse.

3. Add the white fish and salmon to the pan. If you're worried about the coconut milk splitting, turn the heat off and allow the fish to poach using residual heat, otherwise keep the heat down as low as possible. After about 3/4 minutes, add the prawns if they are raw. They will turn pink when they are cooked.

4. Using a slotted spoon, lift the fish out of the pan and place in your dish, putting the poaching liquor to one side. Your dish needs to be about 25cm x 25cm although I tend to use a small lasagne dish. Scatter over the peas.  Turn the oven onto 200 C /400F / Gas 6.

5. When the potatoes are done, mash them with a knob of butter. I also tend to add a squeeze of lime juice to cut the sweetness. Season. Take the lemongrass and kaffir lime leaves out of the poaching liquor before you make the sauce.

6. In another pan, melt the 25g butter, add the flour, and cook for a minute. Add the poaching liquor a bit at a time, whisking constantly. Once it's all added, squeeze in the rest of the juice of the lime and add the zest, bring it up to the boil then simmer gently for 5 minutes, stirring all the time. Season to taste - I tend to do this with a dash of fish sauce, but you can use salt and pepper if you like.

7. Pour the sauce over the fish and peas. Scoop the mash over the fish and rough up the surface in whatever way you choose; I tend to use the back of a spoon. Cook in the oven for 25 minutes. If you like a crispy top (don't we all?), place it under a hot grill for a few minutes.

You can serve with some stir fried greens if you like but it's fine just as it is, and leftovers also reheat well.
