As you may have guessed, I don't much like January and this one has been particularly long, due to a payroll error. My meal plans have been as thrifty as possible as a result. When I'm short, I always revert to Aldi because it is so much cheaper, even than Asda which is my regular haunt. It's lovely to stock up with a few things, have a trolleyful and still feel like I've not been extravagant.
Payday is this week but the shopping was done yesterday so I'm still being careful. Today' meal is made from leftover from Sunday roast. Wednesday is going to be a trial for a few weeks; the children already have swimming lessons after school, but until the middle of March, they also have to be at indoor cricket nets 15 mins away at 6.30 when Monkey's lesson finishes at 6! I have therefore decided we are just having pizza, and I can if necessary reheat some of it when we get home if they want more.
So here's our week in meals.
Monday - Twice baked potatoes filled with chicken
Tuesday - Mushroom rogan josh
Wednesday - Pizza
Thursday - Corned beef and beans
Friday - Fish and chips (oven baked)
Saturday - Haggis, neeps and tatties

Meal Planning Monday - the ever so slightly too busy school holiday edition!
I didn't post last week (or the week before - oops!) but I can assure you I meal planned as I cannot live without it. This is probably the midpoint of the holidays and it will be the second week that the children have gone to a great summer camp during the day which is near husband's work. They went for the first full week of the holidays and it really helped me get some work done; I'd like not to work in these holidays but a quarterly deadline hits and I really can't leave it until September. They had a ball last time so I'm not too worried about them going - they get to play and do loads of things I can't necessarily do with them. And it gives us all space - I find that even if husband is home, they ask me for EVERYTHING!
So, this week, I'm planning on powering through with some work and getting ahead of myself for the following two weeks of the holidays. We're also having a new boiler fitted, already postponed from last week when I took Monkey to Old Trafford.

Meal Planning Monday - the oh heck I haven't blogged yet edition!
This Easter lark has thrown me out. I have a meal plan, I have a shopping list but I forgot to blog about it. This therefore is a very rushed post.We're back to normal as of Tuesday, although it is husband's birthday on Thursday although we are only getting pizza in as we are away the May bank holiday weekend and want to save our pennies for there.

Meal Planning Monday - the spring is sprung edition!
Now Monkey's birthday stuff is all over and done with, we're well into March and the weather is beginning to feel springlike. The nights are lighter (which the children love as they can play out after school with friends) and everything just feels better.I don't know if my meal plan reflects this change in weather but the children have been involved in this week's plan as I asked them what they wanted to eat. "Chicken kievs" came the reply. Great! The one thing I don't make from scratch too.
They did come up with one or two other things which I've added. I've also been going back through my mealplans and picking out things we like so that I can quickly pick them out instead of having brain freeze when faced with a blank sheet of paper. I came up with 100 different things (and some of them have variations!) so I think I should be OK for a while.
This is our week then.

Meal Planning Monday - the regrouping and hopefully calm edition!
I was very organised last week but not organised enough to link up to Mrs M again. Gah. But I had a busy week, preparing for a weekend away in Coventry at work's national conference. I got home at 7.30 on Saturday evening and by 9.30, I was in bed. Shortly after, I was asleep and the next thing I knew it was 4.40am and after a couple of brief awakenings, it was 8.30. And on Sunday, after Missy's swimming lesson, we headed off to Skipton to meet my sister, her husband and their dogs as they are on holiday in North Yorkshire to have lunch with them. Luckily, I kind of had the basis of a meal plan made from last week so I've just juggled it to fit our week. Monkey is going out to tea tonight so Missy has chosen tea. They're starting choir on Tuesday so I don't have to pick them up til 4.30.Husband starts his new job properly today, as in he now gets to go to his workplace (which he still hasn't seen!) so we will now be working out how the family day fits together. This probably means my meal plan won't work!
Anyway, I'm rambling. This is what I have planned for us.
Monday - Fish goujons, mushy peas and mash
Tuesday - Keema with naan
Wednesday - Pumpkin and lentil soup
Thursday - Sandwiches
Friday - Slow cooker ham and beans

Meal Planning Monday - the post holiday holiday edition!
No post for two weeks? Very bad blogger, me! But now, I'm back. Hello. This blog has been neglected and for that, I apologise. Maybe I'll blog about our holiday soon but it was good. Got back on Saturday and now husband has started his course. However, the children are still off this week so it's just me and them during the day.Time indeed to get back to normal meal planning, which I did last night, honest guv but I got distracted by tennis (US Open) and the fact I was getting a new car today. Excited doesn't even cover it. I've had the same car for over 9 years!
I've included Monday's meal even though we've already eaten it because it was universally enjoyed and will be one I make again.

Tuesday - Jamaican pork and kale stew (heavily adapted so not too hot and we have no kale!)

Meal Planning Monday - the quick and easy May edition!
I wasn't really sure what to call this. I thought I'd cobbled it together but there are four new dishes on the plan that I've never cooked before. I was going to make it an empty the freezers/fridges edition but they're pretty empty to start with and only two of the meals have major elements already in. It's all designed to be quick and easy because work is mad and it's nearly new sale day on Saturday, meaning we will probably have takeaway on Saturday night. And Wednesday, I can justify because we're going out early evening and I have a houseful of volunteers coming round at 8pm to stuff bags for said sale.
The plan? Oh yes. I was rambling slightly.
Monday - Sweet potato, spinach and goats' cheese quesadillas (recipe is similar, not exactly the same)
Tuesday - Zesty haddock with crushed potatoes and peas
Wednesday - Egg, chips and beans
Thursday - Sandwiches
Friday - Chicken, pancetta and mushroom stew
Saturday - keeping free
Sunday - Greek lamb filo pie (made with beef mince!)

Meal Planning Monday - the largely recycled edition!
It was a busy week last week involving birthdays, a husband running a marathon and making 3 cakes. Never. Again. Much as I love baking, it was too much and some of the normal cooking went right out of the window. Some things got placed on the backburner so I have a few things to make leftover. And then, this week is busy in a different way - I am working on Saturday running some training at a volunteer training day which involves an overnight trip on Friday, which puts cooking down the pecking order. And then, it's our wedding anniversary on Sunday so we're going to go out for lunch. No less busy then! Husband has asked fora simple tea on Friday, meaning there is really only one or two other meals to choose. One of those days Monkey has a friend coming and has chosen tea.This is how it's looking then.
Monday - Spiced bulghar pilaf with fish
Tuesday - Fish fingers, beans and chips
Wednesday - Curried squash, lentil and coconut soup
Thursday - Sandwiches
Friday - Pasta with bacon and tomato sauce

Maybe, just maybe, next week will be a little calmer. As I enter chasing mode at work next week and I have a day of volunteering on Saturday, it's probably unlikely. May is always busy!

Meal Planning Monday - the uber organised busy week edition!

Hopefully, the title says it all. This week seems really busy for a number of reasons. Firstly, it's husband's birthday on Wednesday and I have to make not one, but two, cakes for him. His work colleagues have requested he bring in a "Kate cake" after I did one for him for a colleague's birthday just before Christmas. Who am I to refuse? And then, it's cake club day on Saturday. That's a three cake week! On top of all that, we are out for tea on his birthday, I have a meeting on Tuesday night and husband is running the Greater Manchester Marathon next Sunday. And I have a busy work week. Oh yes, and the children are out at multisports this afternoon, and their usual stuff on Thursday.
It's a good job therefore that I have been very organised this week. Realising it was a busy week, I started writing our schedule on Saturday and ended up putting a plan together within an hour. So then, I did my online shopping that evening and picked up on Sunday afternoon. So the plan was done, and the shopping in the house before the week even started. How organised is that?!
So, we have a plan and it's a little lighter than normal because of tea out on Wednesday plus only husband needs feeding Saturday night as the children are coming with me to cake club.
Here it is.
Monday - Chicken mustard crumble (adapted)
Tuesday - Sweet potato hash with bacon, pepper and sage
Wednesday - out for tea
Thursday - Curried butternut squash, lentil and coconut soup
Friday - Spiced bulghar pilaf with fish
Saturday - Orzo pasta "risotto" for husband
Sunday - Lamb, chickpea and spinach curry with masala mash (curry done in slow cooker)

Meal Planning Monday - the keeping it simple edition!
Still holidays here although I have to work this week. No rest for the wicked! I opened out choices to everyone and the children came up trumps with a couple of ideas. We have one meal leftover from last week after I ended up taking the children on consecutive days to the Cake and Bake Show in Manchester so I was home late two days in a row. Monkey has discovered Filet-O-Fish recently so I now have to make a home alternative (*whispers* I'm buying pre-made fish burgers!) and Missy Woo asked for cauliflower cheese. I picked the rest - husband was no use whatsoever!This is what we have.
Monday - Cauliflower cheese with jacket potatoes
Tuesday - Tandoori chicken with rice
Wednesday - Fish burgers in a bun (with tartare sauce) and chips
Thursday - Pea and new potato curry with naan
Friday - Creole jambalaya
Saturday - Mince and onions with mash (tho this might get turned into a pie!)

Meal Planning Monday - the moving into February away from snow edition!
So, as we established, blogging to say we had no snow backfired on me in a big way, with two lots of snowfall, the second a significant amount that arrived in the space of a few hours and took everyone by surprise (hence the M6 being closed nearby and several people got stuck there overnight).The snow's gone in a flash though and we're now looking forward to some warmer, but wetter, weather. And it's February - hoorah. It may be my birthday, but January is not my favourite month so I'm always glad to see the back of it. I can feel the days getting longer and the warmer temperatures will help me feel that little bit closer to spring.
What's going on this week? Well, husband is off work for two days as I have got some governor training on Tuesday night so he needed to take the evening off and decided to add Monday to that too. He will however be working the weekend so it's swings and roundabouts.
The recipes are a mix. Monkey chose two dishes from his recentish favourites, I've had some things on my list that I wanted to try making, and there's one carried over from last week because I couldn't be bothered going out to the garage to the freezer. And to complete the week, I fancied a lamb recipe cooked in the slow cooker so a search threw up a nice curry.

Meal Planning Monday - the MAD edition!
Yes, it's MAD. I'm off to the MAD Blog Awards on Friday so yet another week of me planning to pack, travel and unpack afterwards, but I can't wait. This week has to be pretty easy meals wise and I've planned in a meal I can make in advance for my night away and can simply be plonked in the oven. It certainly reduces the likelihood of them ending up in the chippy.

Meal Planning Monday - a finally getting back to normal edition!
We've been away for at least part of three of the last four weekends and with going back to school, I feel like I'm fighting just to stay on top of things. This week should be quieter - although I have parents evening on Wednesday, a possible night out on Thursday and the usual things that the kids do. But the weekend - that's free, hurrah! No packing, tidying up before I go, travelling, washing when I get home and all that other stuff. Phew.
I've tried to go for easyish stuff all week and I'm trying a recipe from a book I'm reviewing at the weekend, so I'll tell you how that goes later. I will finally FINALLY get to make Moroccan chicken this week - events have conspired against me in previous weeks!

Meal Planning Monday - the back-to-school Paralympic edition!
Yes, this week was meant to be a quiet one, with the children back in school on Wednesday. That was until we managed to get tickets for the Paralympics on Saturday, morning and afternoon and a pass to the park on Sunday. This means we will be away Friday night, Saturday night and late back Sunday, so in terms of meal planning, they are out of the window.
Then, on top of that, I realised that my sister was coming up to North Yorkshire this fortnight for a holiday. Talking to her last week, we worked out that Tuesday would be the best day to meet up as the children are still off school and husband is off too. So that probably throws Tuesday out of the window too.
This week is becoming a bit of a write off really, isn't it? Anyway, I still have a plan. And oh yes, one of them was from last week. (You hate me, don't you?)

Meal Planning Monday - the last week of holidays edition
This is very late for me, as I usually have this post done and dusted by Sunday night at the latest, sometimes on Saturday but we were away at a wedding until yesterday afternoon and we unpacked and relaxed last night. We cobbled together a meal plan this morning and headed off to Asda, husband taking the kids to browse the toys whilst I shopped (works for me). I've picked some recipes from a speedy suppers booklet that came with BBC Good Food this month, and one of the recipes is from the Hairy Dieters series that I wanted to try. They're fairly cheap meals too - I have some stuff in the freezer, I managed to get some chicken reduced for the freezer today and even with buying extra stuff for lunches, I still only spent a few pennies over £40.

Meal Planning Monday - holiday/Olympic/August edition
I wasn't really sure what to call this, as you can tell. Normal routine has gone out of the window, what with scrapbooking, watching the Olympics and not a lot else really. Mostly watching the Olympics! The week reflects my need not to make anything too complicated. Sunday, we are having tapas to celebrate (and commiserate the closing ceremony of the Olympics, that I really don't want to end).

Meal Planning Monday - the last week of term edition!
I can't quite believe it that it's nearly the summer holidays. Within 6 weeks, I'll have a child in juniors. This week is slightly busy (again) as I am hosting a Pampered Chef party tonight, Monkey has a friend coming for tea tomorrow and Missy Woo STILL has her dancing lesson this Thursday. (Dammit, I thought last week was the last one of term!) Still, at least Monkey no longer has football which means it's slightly less manic. And then, at the weekend, Monkey has two parties to go to and husband is off to the Open golf at Royal Lytham - tickets to which were his birthday present.
I even managed to get the meals planned on Saturday before I went to a wedding reception and the food bought yesterday to give me as much time today to get the house presentable. Monkey even came to the supermarket with me and my stress levels didn't go through the roof!
So, ladies and gents, I give to you our menu for the week.
Monday - Chilli ginger lamb chops with curried pasta salad

Meal Planning Monday - the over-catering edition!
You're probably wondering what the hell I'm on about but this week, I am deliberately cooking more than we need. The reason for this is that husband is still on his course. (I thought it was one week; turns out it's two) He needs to take reheatable leftovers in with him as he only has access to a microwave and a kettle. So, I put my thinking cap on - which was a tall order after a weekend full of party, trip to Manchester and tennis! Although the recipes below are serves 4, I am in some cases going to scale them up to allow 1 or 2 extra portions.
After a hunt around on my usual places, I think I've done it. It's an odd week because of the course. We're also at school's Celebration Evening one night, and it's our last week of Thursday madness until September (it's me you'll hear breathing a sigh of relief when it's over!) although I am still cooking a chicken for tea. Yes, totally mad. Going to a wedding on Saturday night too.

Meal Planning Monday - the getting back to normal edition!
Right, I'm back to it today. You remember me, don't you? What do you mean, no? Hmph!
The blogging (rightly) took a bit of a back seat on my holidays - yes I managed the grand total of one post, done on my iPad, whilst I was holidaying. Maybe I'll do another post about it, but we had a very mixed week of weather with more rain than not. Two days were completely awful weatherwise, three were OK, one started badly but improved drastically but none were completely gorgeous days from start to finish. Still, we had a lovely time and I ate way, way too much. I will have to watch what I am eating very very carefully over the next few weeks.
So, today we're back to normal. Not totally, as the children don't go back to school until Tuesday but as good as. We seem to have quite a few things on this week, what with it being Father's Day on Sunday, and Missy Woo is in her annual dance show. It's a lot earlier this year because they couldn't get the hall they wanted on their preferred dates so they have had much less time to rehearse, and it comes straight after half term - plus Missy Woo was sick on the day of the last rehearsal before holiday. I'm sure she'll be fine though - she received her costumes on the day she was ill which cheered her up immensely. We're going to see her dance on Sunday afternoon but I have to spend Saturday afternoon watching her final rehearsal so food over the weekend has to be quick and simple to do, which means beef twice in a row.

Thai fish pie - family style
This sounds mad, doesn't it? I first saw it on one of the last episodes of Something for the Weekend and thought I had to give it a go. Unfortunately, on looking at the recipe, I realised I would have to adapt it if I were to make it for all of us as it had fresh chillies in it. With this adaptation in mind, I set about buying the ingredients - and discovered that monkfish was not only difficult to find, it was damned expensive. There were various things about the recipe that I felt weren't quite right (you can tell it was written by a chef rather than a food writer) - like I'm still not sure if it was a typo that 200g butter would be added to the mash. So I've done my own version based on this.
I still add a bit of chilli powder to this, but if you want, you can leave it out. However, I like that it leaves a little bit of warmth at the back of your mouth, just enough for you to know it's there but not enough to have Monkey and Missy Woo grabbing drinks and complaining "It's too spicy." They love this, as do I. If you do want it really spicy, just add some fresh chopped chilli in step 2.
The important ingredients are the lemongrass and the kaffir lime leaves, as they really add flavour. Both are easily bought from supermarkets these days - make sure you buy fresh, not dried, lemongrass.
Thai Fish Pie
Serves 4-6
Ingredients
700g sweet potato, peeled and cut into chunks
200g potatoes, peeled and cut into chunks
1 tbsp vegetable
1 onion, finely chopped
1 clove garlic, crushed
1 stalk lemongrass, bruised (just bash it with the handle of a knife)
2 kaffir lime leaves
1 tsp mild chilli powder (optional)
400ml coconut milk
100ml milk
400g white fish, cut into chunks
200g salmon, skin removed and cut into chunks
200g peeled prawns, preferably king or jumbo size, either raw or cooked
25g butter, plus a knob of butter for the mash
25g flour
100g frozen peas
1 lime, juice and zest
fish sauce (optional)
1. First, place the sweet potato and potato into a pan of hot water, cover and bring to the boil. Simmer until soft. Drain.
2. Whilst the potatoes are cooking, heat the oil in a large pan and add the onion, garlic, lemongrass and kaffir lime leaves. Cook over a medium heat for about 3 minutes. Add the chilli powder, if using, stir and cook for a couple more minutes. Add both milks. If using light coconut milk, turn the heat right down immediately. If you have time, turn the heat off and leave to stand for a while to infuse.
3. Add the white fish and salmon to the pan. If you're worried about the coconut milk splitting, turn the heat off and allow the fish to poach using residual heat, otherwise keep the heat down as low as possible. After about 3/4 minutes, add the prawns if they are raw. They will turn pink when they are cooked.
4. Using a slotted spoon, lift the fish out of the pan and place in your dish, putting the poaching liquor to one side. Your dish needs to be about 25cm x 25cm although I tend to use a small lasagne dish. Scatter over the peas. Turn the oven onto 200 C /400F / Gas 6.
5. When the potatoes are done, mash them with a knob of butter. I also tend to add a squeeze of lime juice to cut the sweetness. Season. Take the lemongrass and kaffir lime leaves out of the poaching liquor before you make the sauce.
6. In another pan, melt the 25g butter, add the flour, and cook for a minute. Add the poaching liquor a bit at a time, whisking constantly. Once it's all added, squeeze in the rest of the juice of the lime and add the zest, bring it up to the boil then simmer gently for 5 minutes, stirring all the time. Season to taste - I tend to do this with a dash of fish sauce, but you can use salt and pepper if you like.
7. Pour the sauce over the fish and peas. Scoop the mash over the fish and rough up the surface in whatever way you choose; I tend to use the back of a spoon. Cook in the oven for 25 minutes. If you like a crispy top (don't we all?), place it under a hot grill for a few minutes.
You can serve with some stir fried greens if you like but it's fine just as it is, and leftovers also reheat well.
