As you may have guessed, I don't much like January and this one has been particularly long, due to a payroll error. My meal plans have been as thrifty as possible as a result. When I'm short, I always revert to Aldi because it is so much cheaper, even than Asda which is my regular haunt. It's lovely to stock up with a few things, have a trolleyful and still feel like I've not been extravagant.
Payday is this week but the shopping was done yesterday so I'm still being careful. Today' meal is made from leftover from Sunday roast. Wednesday is going to be a trial for a few weeks; the children already have swimming lessons after school, but until the middle of March, they also have to be at indoor cricket nets 15 mins away at 6.30 when Monkey's lesson finishes at 6! I have therefore decided we are just having pizza, and I can if necessary reheat some of it when we get home if they want more.
So here's our week in meals.
Monday - Twice baked potatoes filled with chicken
Tuesday - Mushroom rogan josh
Wednesday - Pizza
Thursday - Corned beef and beans
Friday - Fish and chips (oven baked)
Saturday - Haggis, neeps and tatties
Sunday - Chicken pie and mash

Meal Planning Monday - the make ahead weekend edition!
Hope you had a good half term if you were off like we were last week. We're back to school today and into a school Arts Week. I'm away all weekend with work so I'm making a few things ahead of time for them to eat whilst I'm away. The kids are looking forward to it because, in their own words, "Daddy always spoils us when you go away." Daddy has been made aware of this.The rest of this week mostly consists of stuff I know we like and is easy to do. A couple of slow cooker things - I like my slow cooker but I'm conscious I've not used it as much as I usually would this winter.
This is what we're having this week.
Monday - Sausages in onion gravy
Tuesday - Pizza baked potatoes
Wednesday - Lentil loaf
Thursday - Slow cooker all-butter chicken
Friday - Lasagne
Saturday - Chicken and mushroom pie
Sunday - Keeping free

Meal Planning Monday - the no snow edition!

(OK, so the weather forecast decided to make a fool of me. I wrote this late last night and overnight, we unexpectedly got 2-3 ins of snow and it's kept snowing today. Still, school is open so it is not a snow day officially here, just snow-y. )
Yes, what seems like everyone is going on about snow. We, on the other hand, have very little. It snowed on Friday, true, but not a massive amount. Where we live, we seemed to have more than the rest of the local area because we are that bit higher up and exposed but down at school there was much less so that remained open, and as you head to Preston, the snow all but dies out. I really don't mind - the children had enough snow to play in for a while, but everything continued to function. And it's been cold but not too bad - really, Friday was the worst day and on Saturday, I didn't even have to turn the heating up or back on.
It's a bit odd, really. I know it's going to continue to be cold this week so I have tried to keep warming stuff on the menu. I've just realised that I'm meant to be going out for lunch on Thursday so have done a quick last minute reshuffle so I'm not cooking lots in the afternoon and this now means a full week of meals. We have nothing special this week - no parties, events or anything. Sounds boring but it's nice to have a quietish week from time to time. A couple of these recipes, I have snaffled from reading other people's meal plans last week. If that's you, then thanks for the idea. I have a few more lined up for future weeks as I couldn't fit it all in.
Our week looks very much like this.
Monday - Carrot sesame and chickpea burgers
Tuesday - Lamb meatball and pea pilaf
Wednesday - One pot prawn pilau
Thursday - Potato and parmesan soup
Friday - Root veg and pancetta toad in the hole with gravy
Saturday - Cheesy chicken pot pie
Sunday - Sausage cassoulet

Meal Planning Monday - the OMG it's still January edition
God, yes, is it still only 23rd January? I could have sworn it was February this week. Christmas feels like an age ago, although admittedly, other times it seems like yesterday. Make it finish soon. I'm still on a BBC Good Food tip this week - particularly as I love that it adds nutritional information so I can make sure I'm not overdoing it. I'm still being good, and trying to keep up our veg intake. Here are this week's delights.
Monday - Italian style beef stew (adapted for the slow cooker)
Tuesday - Chicken, leek and parsley pie
Wednesday - White fish with spicy beans and chorizo
Thursday - Sweet potato and coconut soup with bread
Friday - Lazy cheesy veg hotpot
Saturday - leaving free
Sunday - Honey and mustard pork with broccoli and mash
