Meal Planning Monday - the fairly late but feeling almost summery edition!

Meal Planning Monday Yes, yes, yes. I'm late with this. I actually worked out WHAT meals we were going to eat this week but didn't work the when. This was because we were away and when I arrived home, I had to make sure I'd done my online food shop.

So, having not picked up the food until this afternoon, I've just gone through what we're having and asked the kids when we were going to have each thing. This week seems to have a summery feel to it in places and the weather since the weekend seems to reflect that - it might not be the warmest but it's dry and sunny.


Monday - pizza (which we've just had!)
Tuesday - Homemade fish finger sarnie
Wednesday - Bean burgers with lime yogurt and salsa
Thursday - Summer vegetable curry
Friday  - Lemony prawn and pea risotto
Saturday - Baked chicken masala with almond pilaf
Sunday - Chilli beef shepherd's pie

So that is us. Over at Mrs M's place, you might find some much less cobbled together plans.

Meal Planning Monday - the using everything up edition

Please don't feel short-changed but I have a confession to make. This is only half a week's meal plan. Why? Well, we are going on holiday on Friday so there is no point meal planning for then and the weekend. 

Because we're going away, I need to empty the fridge and I seem to have loads of bits in that need to be used, I've made a meal plan using them so nothing goes to waste. The aim is to buy as little food as possible this week. I've just done the plan and there is actually very little I need to buy. In fact, I've already made tonight's tea so all I have to do is put it in the oven - hot work but not as hot as if I'd done the prep, cooking and assembly whilst it was warming up. 

Don't expect anything particularly inspiring or innovative this week. Here we go. 

Monday - Lasagne
Tuesday - Fridge bottom risotto
Wednesday - Chicken fajitas (I need to buy a few wraps for this)
Thursday - The usual - sandwiches and crisps!

As you might have guessed, it's very unlikely you'll get a meal plan out of me next week! We are self-catering so there will be some cooking but routines will be slightly awry and days out may affect how much or how little I cook. We plan to relax, catch up with my sister (who lives down there), and have some great days out. Oh, and meet another lovely blogger who's going to be staying on the same park at the same time.

Meal Planning Monday - the birthday / marathon edition!


So, this week is a strange combination and there is not a lot of fancy cooking going on here. Tomorrow is my husband's birthday and then, on Sunday, he's running the Greater Manchester Marathon so he has requested carby things at the end of the week. We've decided we're going out to eat after that, and on his birthday, we're going out for lunch so evening meal will be snacks for us and something quick and easy for the children. In other words, don't expect this to be the most inspiring menu plan I've ever done. I have most things in at the moment so don't really need to do a big shop this week. Always a bonus when you've had birthday presents to buy (not going to reveal what they are in case someone reads this post - and he does occasionally, to check what's for tea!).

Monday -  home made burgers and wedges
Tuesday - beans on toast or something for the children
Wednesday - Jacket spuds filled with quorn chilli or bolognese
Thursday - Sandwiches
Friday - Slow cooker risotto of some sort
Saturday - Squash, ricotta and sage pasta bake
Sunday - marathon day, keeping free.

It will be back to normal next week. Well, kind of - I'm not actually sure there is a normal in this house! Don't forget to check out the other entries to Meal Planning Monday over at  Mrs M's place. Slow cooker risotto - a recipe for success


I love my slow cooker. Regular readers of my ramblings will not be surprised by this revelation as I might have mentioned this before. They are so useful if you want to save money and time, once you learn a different way of cooking - it's not massively different but you do have to adapt recipes for the slow cooker, generally needing less liquid as less evaporates during cooking.

Until recently, I have never considered cooking risotto in a slow cooker. In theory, it should be a prime candidate for slow cooking to save time as risotto does require a lot of attention - constant stirring means you're stood at the hob from the moment you start cooking. After all, I make very passable rice pudding in a slow cooker and the basic ingredients are the same - rice and some liquid. However, I couldn't get over the thought that risotto does need so much attention for a reason - because that attention is what makes it so nice. I'd always steered clear of oven baked risotto recipes for the same reason but people do rave about them.

Putting my prejudices to one side, I decided to give it a go and trawled around some recipes. The first thing that struck me was how many used brown rice, not risotto rice. Maybe I'm a food snob ("Yes!" I hear you shouting at your screen) but I want my risotto to be as authentic as possible and I couldn't see how brown rice could give a risotto that lovely creaminess. Eventually, I found a recipe using risotto. The cooking time  was 2 hours - rice pudding often takes 2 to 3 hours so it sounded right. I put it on one day just before the school run, and checked it after one hour. There was very little liquid that hadn't been absorbed and rice was already well cooked. Overcooked, in fact. By the time it was actually tea time, it was very overcooked. It tasted nice though but the rice needed some work.

I decided to give it another go but keep a closer eye on it to see just how long it needed to make rice that wasn't overcooked (or undercooked, for that matter) because it was obvious to me that it needed much less time. The result I got was pretty much near perfect for my tastes. Husband said it was still slightly different to conventional risotto but the children both loved it and asked for it again!

I use the high setting on my slow cooker. If you want to leave the risotto longer, then do cook it on a lower setting but it can take anything up to twice as long to cook. It might be a case of knowing your own slow cooker to get it right.

I'm making my risotto with leek and mushrooms because that's what we had in. Raw meat should be cooked before you add the onions or leeks.This serves 2 adults and 2 children - if you have 4 adults to feed, or very very hungry children, increase the rice to 300g and stock to about 800ml. The stock doesn't need to be boiling - it will cook quicker that way so only use boiling stock if you really are in a hurry.

Slow cooker leek and mushroom risotto
Serves 4

Ingredients
knob of butter
1 tsp olive oil
3 leeks, thinly sliced (or 1 onion, finely chopped)
200g mushrooms, sliced
250g risotto rice
650ml hot chicken or vegetable stock
50g parmesan, grated


1. Melt the butter in a large pan and add a splash of olive oil so it doesn't burn. Add the leeks or onion and the mushrooms and cook over a medium low heat until the leeks or onions are soft but not coloured, which takes about 3 -5 minutes.

2. Add the rice and stir until it starts becoming translucent, about another 3 minutes. Tip everything in to the slow cooker.

3. Pour in all but 50ml of the hot stock and give everything a quick stir, cover and cook on high.

4. Give it a quick stir if you can after about 20 minutes. After 40 minutes, check the rice to see if it's done  - much like pasta, risotto is best slightly al dente, with a little bite to it. If it's not cooked, test it again after another 5 minutes. When the rice is done, turn off the slow cooker, and quickly stir in remaining stock and most of the parmesan, reserving some for a garnish. Put the lid back on and leave it for 2 or 3 minutes.

5. Spoon into bowls and top with a little parmesan before serving immediately.Buon appetito!

Meal Planning Monday - the finally Spring edition

Yes! It's finally Spring this week, whatever the Met Office says. We don't have a particularly busy week, apart from Parents Evening. At the weekend, we are going out on Saturday- I'm not going to tell you where, as I will be blogging about it later, so that's staying free. This week's menu is a mix - some things that we like (Monkey insisted we have the honey mustard pork this week, it's a favourite of his), me trying to perfect slow cooker risotto so that is back this week, plus there are a few new recipes I fancied trying. You'll notice the Thai spiced fish pie from last week - well, it got postponed to Saturday, then husband decided he was going to part cook Sunday tea on Saturday but it got so late, we decided to eat it there and then! Then, he was going to make the fish pie but on a whim, we ended up out for tea and I cooked the fish pie last night ready for tonight. So I did kind of end up cooking on Mothering Sunday, but I don't mind.

So here we go.

Monday - Thai spiced fish pie (see last week)
Tuesday - Honey mustard pork, mash and sweetcorn
Wednesday - Veggie shepherd's pie with sweet potato mash
Thursday - Sandwiches
Friday - Gnocchi bolognese with spinach
Saturday - Stay free
Sunday - Slow cooker leek and bacon risotto

Meal Planning Monday - the Mothering Sunday edition


We're having a quieter week this week after  Monkey's birthday celebrations. Having said that, we still have the usual weekly activities and school is having a Science Week, including a family Science evening and so, we won't be totally bored. This week is just a mix of some older favourites adapted for the slow cooker and some recipes I'd like to try.

Oh yes, and as Sunday is Mothering Sunday, I am not cooking. Husband has therefore told me what he is going to cook with the children. Apparently, they are also making pudding but I'm not entirely sure what right at this very moment. There is still time for this all to change before Sunday, but they can go shopping for the ingredients!

So, eyes down, look in, people. Here's the menu for this week with links where I have them. (Not that you need a recipe to make sandwiches, eh?!)

Monday -  Pork and veg chilli (slow cooker)

Meal Planning Monday - another 5 for £20 edition!

You may remember that I have in the past reviewed the Sainsbury's meal plans. Last May, we tried the £50 weekly one and then in October, we tried out one of their evening meal plans, which offer 5 evening meals for a family of 4 for £20. Sainsbury's have just launched a new meal plan so have given me the chance to try  the latest one. The meals have generally been brilliant, although I do find some of them rather carb heavy so I tend to cut back on quantities now if it's a pasta or rice dish in particular. And they add mozzarella to risottos - what is THAT all about?

The meal plans are great if you don't have time to meal plan and they often suggest veggie options. You can print a shopping list for you and transfer most of the ingredients into their internet shopping site - you have to add some of the items for reasons I will never understand.

So here is what we're having this week, courtesy of Sainsbury's.

Monday - Tomato and broccoli risotto
Tuesday - Simple sausage supper
Wednesday - Creamy pork and mash
Thursday - Sandwiches or soup and sandwiches
Friday - Turkey chilli with rice
Saturday - left free for family party
Sunday - Cheesy jacket potato with bacon and pepper ratatouille

Meal Planning Monday - the 5 for £20 edition!


Time for a different style of post this week again. I'm testing out one of Sainsbury's 5 for £20 meal plans this week. The idea is that the meal plans will provide 5 family meals (for 4) for just £20. Seems amazing in the times we're living in, doesn't it In order to prove it, Sainsbury's have sent me a £20 gift card to give it a go and see how I get on.

Meal Planning Monday


It's Monday so it must be meal planning time!  This week's is kind of rushed - I'd started putting together a plan on Saturday, and then on Sunday morning, I realised I would need to do the food shopping as I'm out most of the day. So, this week is slightly cobbled together as I only had written what sort of dish eg "fish" for some of the days so I had to do a hasty extra spot of planning in my head. Never good but never mind.

Meal Planning Monday



I can't believe it's another week gone by. Last week's went very well, with more meals from Nick's book My Daddy Cooks. The creamy mushroom and parma ham pasta bake was a particular hit with everyone.

So, time to plan some more meals. As I'm away at Cybermummy this weekend (all thanks to my sponsor Seaworld Parks, I've planned in a few things I can prepare ahead and leave in the fridge. The Italian meatloaf is particularly good for this as it's made in 5 minutes.

Monday - Ham and sweetcorn pizza, carrot sticks, cucumber and tomatoes
Tuesday - Oven baked risotto (from Nick's book)
Wednesday - No cooking
Thursday - Goulash (from Nick's book)
Friday - BBQ ribs (from Nick's book)
Saturday - Italian meatloaf
Sunday - Kept free (possibly takeaway)

A reasonable mix, I think - but no fish! I really must rectify that next week as the children do actually love fish. And of course, I shall not be eating some of those meals - on Friday, I will be eating Italian at Sandy's Meet, Greet and Eat and on Saturday, curry in aid of Gemma's birthday.

Meal Planning Monday

Oh yes, it's that time of the week again! A week comes around so fast. Last week, we had all the meals as planned, apart from a change of accompaniment to the Sausages in Onion Gravy -  homemade chips in the oven instead of mash, the kids had peas and we had broccoli. Everything went down well - especially the roasted veggie pasta I made on Saturday evening, which elicited the question from Monkey of whether we could have it again and if so, when - always a good sign!

And we had a fabulous time at Parkers Arms yesterday for Mother's Day lunch. Thanks so much to Stosie and the team for a lovely meal.

Enough of that, this post is about my plan for this week, which I managed to do on Saturday when I was lucky a bit of peace and quiet.

So here we go for the week commencing 4th April.

Monday - Lentil and Lamb Moussaka
Tuesday - Paprika Chicken
Wednesday - Salmon with Leeks and Parsnip Mash
Thursday - Pizza Pinwheels for the kids, Ricotta, Tomato & Spinach Frittata for us
Friday - Beef and Bean Crumble
Saturday - Pancetta, Mushroom and Leek Risotto
Sunday - We're away so I won't be cooking. 

A lot more balanced this week - something different every day - and no curries! Instead, it seems to have a more Italian feel with a frittata, a risotto, and the pizza pinwheels.
