Meal Planning Monday - the October comfort food edition!

Meal Planning Monday(I couldn't think what else to call it!)

It's getting colder. Yeah, it's not that cold compared to some of last winter. But cold, compared to what it used to be recently. I don't like this. The heating is on, although don't tell husband but I've got it set so it's only just taking the edge off the cold in the house which means it's not coming on that much at the moment.

Anyway....

Need to use up leftover roast chicken this week and I have a dish carry over from last week after a change of plan when Missy Woo went out for tea on Saturday leading to a freezer dive. We're away at the weekend at a family party for my nephew's 30th birthday. Yes I do feel old, thanks very much.

So, this is it.

Monday - chicken and stuffing pasties
Tuesday - Sweet pea fish pie
Wednesday - Beef keema with carrots and potatoes
Thursday - Sandwiches (tho I'm going out in the evening)
Friday - Honey mustard pork
Saturday - away
Sunday - keeping free, possibly fish finger butties or just takeaway

So that's us. Another week of meals, another week closer to... half term! Click on the badge above to find the rest of this week's meal planning delights by more lovely bloggers.

Meal Planning Monday - the leftover leftovers edition!

Meal Planning MondayYes, it's that kind of week. Stuff leftover here and there - stuff I didn't make last week, stuff leftover from Sunday dinner, stuff hidden in the freezer. It should mean it's a cheap week but I've said that before!

We have nothing special planned this week. I actually quite like that after the madness of the last few months! We're into a groove now with school work and stuff, the routine is generally worked out so we know what we're doing and it's generally ticking along.

This, then, is our week.

Monday - Beef stroganoff and rice (leftover roast beef)
Tuesday - Leftover something from the freezer (it's some kind of potato topped pie)
Wednesday - Chicken and mushroom pasta bake
Thursday - Sandwiches
Friday - Italian chickpea burgers (carried over from last week)
Saturday - Beef keema with carrots and potatoes
Sunday - Roast chicken

Yes, that's it. Short and sweet from me today. Don't forget to visit Mrs M's. Click on badge above for more meal planning mayhem. Or something.

Meal Planning Monday - the regrouping and hopefully calm edition!

Meal Planning MondayI was very organised last week but not organised enough to link up to Mrs M again. Gah. But I had a busy week, preparing for a weekend away in Coventry at work's national conference. I got home at 7.30 on Saturday evening and by 9.30, I was in bed. Shortly after, I was asleep and the next thing I knew it was 4.40am and after a couple of brief awakenings, it was 8.30. And on Sunday, after Missy's swimming lesson, we headed off to Skipton to meet my sister, her husband and their dogs as they are on holiday in North Yorkshire to have lunch with them. Luckily, I kind of had the basis of a meal plan made from last week so I've just juggled it to fit our week. Monkey is going out to tea tonight so Missy has chosen tea. They're starting choir on Tuesday so I don't have to pick them up til 4.30.

Husband starts his new job properly today, as in he now gets to go to his workplace (which he still hasn't seen!) so we will now be working out how the family day fits together. This probably means my meal plan won't work!

Anyway, I'm rambling. This is what I have planned for us.

Monday - Fish goujons, mushy peas and mash
Tuesday  - Keema with naan
Wednesday - Pumpkin and lentil soup
Thursday - Sandwiches
Friday - Slow cooker ham and beans
Saturday - Leek and tomato eggy bread bake
Sunday - Butter pie, apples and cheese

As ever, click the badge to visit Mrs M's and you will find lots more meal planning fun.

Meal Planning Monday - the back to school edition!

Meal Planning MondayToday is the first day of school for the children. It seems like ages ago since they were last at school, but also it seems to have flown. For weeks, I have had "Lay in darkened room" written in my square for today. It's not been that bad really but boy, they are ready for school again and thankfully, both raring to go.

In my attempt to be uber-organised, I got my meal plan done yesterday. And my shopping is already in the cupboards. This means I am raring to go myself once I have done the school run because I have a busy week (when don't I?!). I'm off to Coventry for work on Friday, to our big annual event and AGM and I'm presenting one workshop and helping in another. I have one set of slides to do and possibly another set to edit for someone else. Sheesh. Add to that all the little stuff that gets put on hold for summer holidays and you'll see what I mean. Consequently, I'm sitting here typing this about to plan my week out once I've shared my meal plan with you.

This therefore is what we're having.

Monday - Cheesy polenta with sausage ragout
Tuesday - Keema with peas and mini naan
Wednesday - Pizza pie
Thursday - Sandwiches
Friday - Pasta with something (Husband is cooking!)
Saturday - Tomato and chorizo rice
Sunday - Hoisin chicken wings, corn cobs and rice

Being organised this week involves me actually remembering to link up to Mrs M's linky, which you can find by clicking on the badge above, where you will find many more meal plans more exciting than mine.

Have a good week.

Meal Planning Monday - the reverse engineered edition and OMG, it's Christmas!

So, what do you know? It's Christmas week. Obviously, you know what Sunday will mean, but maybe I'll do a separate post about that but we're largely traditional. And actually, I love doing it.

What about the rest of the week? Well, I only have five days to plan. We kind of started a little "tradition" a few years ago in that we have Chinese on Christmas Eve. It's a nice difference to what is to come and it does mean I don't have lots of cooking to do. I always forget and start to ponder what to cook until my husband reminds me. So we'll have that again and I can concentrate on all the prep to make Christmas Day as easy as possible.

So, why is it reverse engineered? The answer to that is the little email that popped into my inbox on Friday, offering 20% on my food shop. So, hurriedly, I put together an order, just chucked in what I needed and perhaps a few things extra without a thought to a plan. I nearly got scuppered when my mother rang me near the end of my hour but I remembered in time and got it in. And because I was pretty busy, I never got time to go back and add anything, let alone plan this week's meals. Hence, reverse engineered - I'm planning the meals from what I know I have and hopefully, I'll plan it so I don't really have to go back to the supermarket much.

Here's the plan:

Monday - Sundried tomato and chicken pilaf (in the slow cooker)
Tuesday - Mushroom risotto
Wednesday - Keema curry
Thursday - Cheesy broccoli pasta bake
Friday - Honey mustard pork (yes, again. Monkey asked...)
Saturday - Chinese!
Sunday - Christmas dinner - turkey et al.

Currying Favour

Something else I like to cook is curries. When I'm planning meals, I have to hold myself back from making a curry or at least something spicy every day. I didn't make a curry at all until I was in my mid-twenties, but then I didn't really eat curry or "get" it until I was an adult. My parents didn't like it and so we never had it as children.

Curries are almost the polar opposite of baking, that I blogged about last week. You don't have to be anything like as precise with your measurements. However, it is also something that people think are difficult so they get something out of a jar to make one. But really? They are so not! You do often need a long list of ingredients but most are easily obtained from your supermarket and if not, a local Asian grocer will normally be happy to help you.

When I started making curries, I used to use curry paste or curry powder. Occasionally, I still do for various recipes I have in my collection (I am rather geeky and collect recipes to store away for use later!). They have their place and I really have nothing against them. However, if you want to make a really great curry, you need to have the individual spices in stock. I find, because I store my spices for a fairly long time, that I need to add more than the recipe states because the flavours do fade over time as the oils in the spices oxidise in the air.

I have this book in my kitchen called "50 Great Curries of India" by Camellia Panjabi, who set up the Bombay Brasserie in London. I use her homestyle curry recipe quite a bit as it allows me to curry whatever I have at home. However, I do use several other recipes out of the book quite regularly. This one is a particular favourite, because it is pretty simple and tasty, and it uses ingredients that are simple to get hold of; I've normally got them all in stock. It's a keema and therefore made from lamb mince. Don't pull a face - the first thing you do is boil the mince to render the fat so the resulting curry is not greasy at all. I've made it countless times and it seems to be that little bit different each time, but never in a bad way. It is also really good when made one day and eaten the next. This is what I did when I made it the other day - I had a busy day but wanted a good curry, and it doesn't take long to get going, so it's easy to make ahead. I have never done, but I would imagine it would freeze well too. Here's the recipe. It's worth taking time to get the onions really brown first as they add so much to the flavour if done like that.

Dhaniya Keema (Minced Lamb with Coriander)
(Serves 4)

Ingredients

700g/1.5lb finely minced lamb (don't worry if it's not finely minced!)
3 garlic cloves
2 cinnamon or bay leaves
80ml oil (veg or sunflower best)
300g/10oz onions, finely chopped
5cm/2in cinnamon stick
3 cloves
3 green cardamoms
1cmx0.5cm/0.5inx0.25in piece of fresh ginger, finely chopped
1-2 tsp mild chilli powder, to taste
0.25 tsp ground turmeric
0.75 tsp ground cumin
1 tsp ground coriander
1 tsp garam masala
2 tomatoes, chopped or 200g chopped tomatoes from a tin.
1 bunch fresh coriander, finely chopped

1. Boil the mince in 500ml/2cups water with 1 whole peeled garlic clove and the cinnamon or bay leaves, for 10 mins. Strain away the water (not down the sink, you'll block it!). Finely chop the other garlic cloves.

2. Heat the oil in a cooking pot. Fry the onions until golden brown - about 20 mins. (I usually start this whilst the mince is boiling, and keep the pan on a mediumish heat. You'll need to watch it as burnt onions will just make the whole thing taste burnt). Add the cinnamon stick, cloves, cardamoms, ginger, garlic and chillies. Cook for 2 mins, then add the mince and saute for 5 mins. (I normally spend this time breaking up the mince as it seems to form a solid block when boiled!). Add the turmeric, cumin, coriander and half the garam masala; saute for a further 5 minutes, stirring every minute or two. Add the tomato and season to taste.

3. When the tomato is totally absorbed, stir-fry for a couple of mins. Add 500ml/2cups of water and cook until tender. (The recipe doesn't say how long, but I normally simmer for about an hour and let the sauce reduce right down). Add the corander leaves and remaining garam masala. Stir well and cook for 3 mins or so, uncovered. The dish has very little gravy so can be eaten with indian breads or rice. The book also suggests pasta but I'm not ready for that. Don't forget to remove the cinnamon stick!

Now, I make a few changes to this:

a) I don't always use cardamoms. If you bite on one, it's like chewing on aftershave and not always a nice experience. Feel free to regard the cardamoms as optional.
b) If I'm making for the next day, I leave out the coriander leaves and extra garam masala until I reheat. Occasionally, I forget to do this anyway but hey, it's not killed me.

Here's the curry.

We ate it with poppadoms and I had some mango chutney with it, mainly because I love mango chutney! I took this on my phone and I've just realised how sunny it was, even at 7pm - just look at that shadow. It looks like a small portion but believe me, it's filling.
