Meal Planning Monday - the May half term edition!

Meal Planning Monday
So, yes, half term is upon us all too quickly. This was hastily put together with the help of the children. Well, we rapidly chose some things to eat, then I've organised them into set days to fit into our week. Not that we are up to much - we're not going away anywhere, we can't take Monkey swimming (he's in a cast until 5th June), and all we are doing is chilling out, and having friends over one day. That's all that's planned, apart from the odd party the children have to go to - this time of year is busy for friend's birthdays for both children.

This is what we have planned.

Monday - Prawn risotto
Tuesday - Corned beef pie
Wednesday - Mushroom stroganoff
Thursday - Lasagne, salad and garlic bread
Friday - Fish fingers
Saturday - Roast chicken
Sunday - Quesadillas (with leftover chicken possibly)

Meal Planning Monday - the quick and easy May edition!

Meal Planning Monday

I wasn't really sure what to call this. I thought I'd cobbled it together but there are four new dishes on the plan that I've never cooked before. I was going to make it an empty the freezers/fridges edition but they're pretty empty to start with and only two of the meals have major elements already in. It's all designed to be quick and easy because work is mad and it's nearly new sale day on Saturday, meaning we will probably have takeaway on Saturday night. And Wednesday, I can justify because we're going out early evening and I have a houseful of volunteers coming round at 8pm to stuff bags for said sale.

The plan? Oh yes. I was rambling slightly.

Monday - Sweet potato, spinach and goats' cheese quesadillas (recipe is similar, not exactly the same)
Tuesday - Zesty haddock with crushed potatoes and peas
Wednesday - Egg, chips and beans
Thursday - Sandwiches
Friday - Chicken, pancetta and mushroom stew
Saturday - keeping free
Sunday - Greek lamb filo pie (made with beef mince!)

So it's looking quite good. How is your week shaping up?

Meal Planning Monday - the last week of term edition!

I can't quite believe it that it's nearly the summer holidays. Within 6 weeks, I'll have a child in juniors. This week is slightly busy (again) as I am hosting a Pampered Chef party tonight, Monkey has a friend coming for tea tomorrow and Missy Woo STILL has her dancing lesson this Thursday. (Dammit, I thought last week was the last one of term!) Still, at least Monkey no longer has football which means it's slightly less manic. And then, at the weekend, Monkey has two parties to go to and husband is off to the Open golf at Royal Lytham - tickets to which were his birthday present.

I even managed to get the meals planned on Saturday before I went to a wedding reception and the food bought yesterday to give me as much time today to get the house presentable. Monkey even came to the supermarket with me and my stress levels didn't go through the roof!

So, ladies and gents, I give to you our menu for the week.

Monday - Chilli ginger lamb chops with curried pasta salad
Tuesday - Pinwheel pizza
Wednesday - Lemon scented fish and chips
Thursday - Courgette, bean and cheese quesadillas
Friday - Turkey and coriander burger with guacamole
Saturday - Special fried rice with barbeque chicken

(There are no links as I took all the recipes from this month's BBC Good Food mag and the recipes don't appear straight away on the site although they usually do within a month or two.)

Don't forget to check out other Meal Planning Monday entries over at Mrs M's place - but stop by and let me know what you are eating this week first.

Kids food - Quick Quesadillas

Wraps. My kids love them, but they haven't worked out the right way to eat them so they make the unholiest of messes, particularly as they like cheesy beans in them. When they want wraps, and I have leftover stuff to use, I offer them quesadillas because it's a cross between wraps and pizza - which they also love - and makes less mess (nothing my kids eat makes no mess).

Pretty much anything that can be chopped up and cooked in a pan can go in the filling. I add chicken, sometimes minced beef, but frequently, it's just veg and cheese. It helps get certain veg down them that they sometimes won't eat in other things. Beans are a a nice vegetarian addition to make it more substantial.

How much this feeds will depend on the size of the wrap you use. This time, I used Asda ones which are small so it fed 2 but the Discovery ones are much bigger; you need a lot more filling and I can feed 4 small children with those. Alternatively, make your own. My children are quite good with spices as long as they are not too hot. Rein back the spices as you see fit.

Here's the recipe for the specimen as featured on this post. It takes 15 minutes to do so great if you're short of time.

Quesadillas

Ingredients

2 wraps
1 tbsp oil
1 clove garlic, peeled and crushed or chopped
1 red onion, halved and thinly sliced
1 tsp mild chilli powder
1 tsp ground cumin
1 tsp ground coriander
Large handful of button mushrooms, sliced
1 small red pepper, deseeded and sliced into strips
1 small courgette, halved then sliced
1 tbsp tomato puree (optional)
1-2oz cheddar cheese, or to taste (I use extra mature)

Method

Start by turning your grill onto medium high.

1. Heat the oil in a frying pan or wok. Add the onion and garlic and fry until softened. Add the spices, and stir for about a minute. Stir in the veg, allowing the oil and spices to coat everything and cook for up to 5 minutes. Add the tomato puree and cook for another minute. Taste and season.

2. Place one of the wraps on a baking sheet. Spread the veg mixture evenly across the wrap and grate over two thirds of the cheese. Place the other wrap over the top, and grate over the rest of the cheese.

3. Place under the grill until the cheese is melted and slightly golden; this rarely takes more than a couple of minutes so keep an eye on it. If you have a griddle pan big enough, you can place it in a hot griddle pan for a couple of minutes per side. I don't bother as it involves turning the whole thing over but it does mean you get those pretty griddle lines on it.

4. Remove from the grill and cut into wedges.

I like to do carrot sticks, cucumber sticks and cherry tomatoes for the children to eat with it but as you can see, we only had cherry tomatoes in the day I made this! Don't make the filling too wet and work fast once you put the veg on the bottom wrap otherwise it can go soggy. Using a griddle pan would probably solve this but it's too fiddly for me - I reckon the filling would fall out turning it.

If I do add chicken and using raw meat, I slice it thinly and cook it through before the onions,  remove it and add it back in with the veg, which is the same point at which I would add cooked chicken or other meat.

Feel free to make up your own variations. Have a go and I'd love to see your efforts if you try. Happy cooking!
